Baking is both a science and an art! Numerous trials and errors, measuring and weighing, understanding the subtle differences between soft, medium and stiff peaks and deciphering the nuances between using different types of baking tin (non-stick vs aluminium), greasing of tin, the list goes on......Food photography is an art by itself. I am so enamoured of bloggers who had such beautiful photos of their baked goods.

The Japanese cheesecake was an epic fail 🀣 . As you can see, the cake failed to rise, which I highly suspect was due to my poor technique of egg white whipping. Not giving up, I attempted the orange chiffon cake shortly after and to my delight, it was successful (finally!!)✌

Madeleines and Boba. Nothing in common actually (except they are both high in carbs and should be consumed as an occasional treat) 😁

Weekdays and weekends have become a big blur since CB started; WFH, HBL, cook, clean, look after kids and exploring new collaboration opportunities for my business.

Hence, public holidays are precious as I can spend insane hours in the kitchen doing fun things. For today, I have decided to bake madeleines and make some boba milk.

Our family loves Delifrance madeleines and that had inspired me to try baking this. Madeleines are best consumed fresh out of the oven and guess what, most were gone in a flash when these bite-sized, crisp-at-the-edges buttery morsels were unmoulded ! πŸ€ͺ.

For boba milk, it's my 1st successful attempt, having failed the previous try with ultra hard pearls haha. We can in fact control the level of sweetness in the syrup that results in a less sweet boba milk that the kids slurpped up happily 😍.

It has been a tiring yet awesome Vesak Day weekend. The kids helped with preparing my madeleines mould, rolled (some) of the bubbles and of course helped ate up all the stuff!

Homemade meatballs in tomato sauce spaghetti. It's a kid's favourite!

Disclaimer: I forgot to add in an egg to bind the meatballs together before pan frying, hence resulting in some meatballs falling apart πŸ˜…. Oh well, that's what home cooking is all about right? You try, fail and try again!

P.S. This was before ST published the Ikea meatballs recipe, which I'll try next once I get my hands on some beef mince.

I have previously written a blog post on my website (www.pinnaclenutrition.com.sg) showing food photos of what I have been cooking and feeding my family with.

Recently I have started to take photos of my meal creations in an attempt to share on social media during this period but more importantly, to also remember this difficult time that we are living in right now.

First up, Fried Carrot Cake. I didn't have the time to make the carrot cake from scratch and used the ready made ones. Pan fried the chopped up carrot cake pieces in a non-stick wok before adding in the garlic, preserved radish, eggs and a splash of fish sauce. It's definitely a healthier version of the hawker version

A write-up on what I predict are the top 3 nutrition trends in 2020. πŸ“ˆπŸ“‰πŸ“Š.

This idea of a nutrition crystal ball was conceptualized in 2019, together with the team at Core Collective, before COVID-19 struck. But I guess the most-trended nutrition topic for now and the rest of 2020 would have to be nutrition for strong immnunity 😷.

I strongly believe, backed by science, that losing weight is NOT just seeing the numbers on the weighing scale move to the left.

Rather, it should be about losing body fat and keeping your lean muscle mass to sustain the weight loss and prevent weight regain in the long-run.
