We have already completed the harvesting process in some of our lots, but the work in the field continues.
In these lots we are starting work of the sanitation aspect of harvesting or "re re" (going over the trees and collecting grains that failed to mature to control bit), fertilization to de-stress and awaken plants, generate foliage and prepare for the next flowering, cutting of the terminal bud of the main stem of some plants to slow their orthotropic growth and stimulate their plagiotropic growth as well as the birth of secondary branches that will produce new bulbs with new coffee beans.

During harvest time we also work to strengthen the diversity and future of the Hacienda Trono de Dioses.
The SL28 variety allows us to face the impending climate change by withstanding long periods of drought, and the variety Cultivar Caripe allows us to deepen the identity and connection between Baristas, Roasters, Cuppers and consumers with our origin, aside from the fact that both varieties offer exceptional results in the cup.

Key words for the slow drying process of our natural coffees: patience, safety, control and progressivity.
We apply slow drying processes and the progressive incidence of UV rays on coffee beans while they lose moisture, controlling temperature, relative humidity and the airflow present in the solar dryer.
That way we are able to develop profiles that are complex, sweet, clean, stable and long-lasting. 🍇🍯🍫🍒🍓

Measuring the °Bx of the mucilage allows us to know the sugar content of this substrate before beginning the fermentation and, after the same, it allows us to know how much of that sugar was degraded.
Keeping records and the traceability of all this data allows us to implement again what has been a success and correct any mistakes for the following harvests.📋📈

Coffee varieties with yellow beans are more difficult to pick than varieties of red beans, so we must carefully check both ends of the bean before picking it from the branch.
In this way, we achieve the most homogeneous sample possible before fermenting and drying.
All this effort is worth it since we are able to obtain coffees that are as extraordinary as our origin. 🍒⛰
