Pizza

2 eggs
1 green onion, chopped
2 teaspoons water
1 teaspoon butter
1 prebaked mini pizza crust
1/3 cup shredded cheddar cheese
1/4 cup pizza sauce
12 slices pepperoni (пеперони, острая копченая колбаса)

Directions
In a small bowl, whisk the eggs, onion and water. In a small skillet, heat butter until hot. Add egg mixture; cook and stir over medium heat until eggs are partially set.
Place the crust on an ungreased baking sheet. Sprinkle with about 2 tablespoons cheese and drizzle with about 2 tablespoons pizza sauce. Top with scrambled egg mixture. Drizzle with remaining pizza sauce; sprinkle with remaining cheese. Top with pepperoni.
Bake at 200° for 10-12 minutes or until crust is slightly crisp. Let stand for 5 minutes before serving.

Chicken Egusi soup.

Ingredients:
(8 servings)
200g Egusi seed
1/2 kg chicken
Smoked fish
Okporoko
Meat (assorted)
4 fresh pepper
3 Tbsp ground dried crayfish,
1 small bunch of Ugwu leaves (or bitter leaf or your preferred choice)
2 cksp palm oil
2 Knorr Cubes,
1 small onions,
3 large fresh tomatoes,
to taste salt

Cooking directions:
-Cut chicken into small cubes, wash thoroughly and pour into cooking pot. Season with 1/2 onion and one Knorr Cube. Add a little water and boil for about 10 minutes or until tender.
-When your chicken cooks a little, add your assorted meat meat and cook for at least 3-4 minutes.
-Mix the ground egusi in half a cup of water and; blend tomatoes (optional), pepper, and the remaining onion and set aside.
-Heat the palm oil in another pot; Pour tomatoes paste into the hot oil, stir for about 5 mins and add the Egusi mixture.
-Stir well and allow it to fry for a moment. Add the crayfish, and the remaining stock cube, stir well
-Add little water and allow to cook for five minutes. Add the boiled chicken, washed okporoko, smoked fish, assorted meats and stir.
-Turn the heat down and simmer for a further 2 minutes.
-Wash and finely slice the Ugwu leaves (or your preferred leaf choice). -Add to the soup and stir. Continue to simmer for a further 5 minutes to allow the vegetables to soften.

Note: The tomatoes gives Egusi soup a unique taste. It's not necessary thou.

Serve with fufu, semo, wheat, amala, eba or your preferred swallow...😊

Whipped Feta & Caramelised Onion Risotto
I would happily eat this dinnercevery night! 😄

The lovely salty, creaminess of the feta, goes SO well with the sweet, fried onions!!

This is a proper weekend dinner...and one that you won't want to end!

Feeds 4

Olive oil for frying
400g onion finely sliced
2 tbsp brown sugar
300g arborio risotto rice
1 litre – 1.2 litres vegetable stock
1 tsp cornflour
150g soft (Philadelphia style) cheese
150g feta cheese crumbled
½ tsp ground black pepper
1 tsp lemon juice
Salt to season

Heat a good glug of olive oil in a large non-stick pan with a lid.
Add the onions and fry on medium to low heat, stirring regularly for 10 minutes until soft.
Stir in the sugar and fry for a further 10 minutes. Remove from the pan and set aside.
Using the same pan, add the risotto rice. Fry for one minute on a medium heat.
Slowly add the stock a little at a time. Each time give it a good stir for a few seconds before adding the lid to the pan. When the stock has been absorbed, add more. Keep the heat on a gentle simmer.
When all the litre of stock has been used, simmer until tender. (the risotto rice should take 20-25 minutes to cook) If it’s getting dry, add a splash more stock.
In the meantime, take around 50g of the caramelised onion and place it between kitchen roll until dry. Sprinkle with cornflour and use your hands to ensure they’re coated.
Heat oil in a non-stick frying pan until hot. Fry the floured onions until crispy, set aside.
Place the lemon juice, crumbled feta and soft cheese in a bowl, with a splash of milk or water. Blitz with a hand whisk until smooth.
Turn the heat off the risotto. Stir the whipped feta into the pan, until evenly spread, thick and creamy with the black pepper and a little salt.
Stir in the caramelised onions (not the crispy ones) and gently simmer for a couple of minutes. Divide between 4 bowls.
Finish with some crispy onions and more black pepper.

Tortellini Bolognese Bake
If spaghetti bolognese is a regular for you...you need to try this!!

It's a proper crowd pleaser, a really easy midweek win, when you need to get something on the table that you know everyone will love!

You could definitely experiment with different tortellini flavours if you wanted...I had a goat's cheese one the other night that I think would be incredible in this!

Recipe is below - hope you've had a lovely weekend, A xx

Feeds 4

Oil for frying
1 onion finely chopped
500g beef mince
1 tbsp honey
1 tsp mixed herbs
2 cloves garlic finely chopped
400g tin of chopped tomatoes
800ml beef stock
Salt and pepper
300g spinach & Ricotta Tortellini
80g (approx) grated cheddar cheese

Heat a drizzle of oil in a large non-stick saucepan with a lid. Add the onion and fry for 5 minutes on a medium heat, stirring regularly.
Add the beef mince to the pan and fry for 5 minutes.
Add the honey, mixed herbs and garlic and fry for 1 minute.
Add the chopped tomatoes and beef stock. Season with salt and pepper and bring to the boil.
Heat the grill to medium/high
Stir in the tortellini, bring to the boil and simmer with the lid on for around 10 minutes or until the tortellini is tender and the beef is cooked through.
Transfer to a heat proof dish, sprinkle with grated cheese and grill for around 7 minutes, until the cheese has melted.
Serve with salad or garlic bread.
