Tender stewed beef

Ingredients:
Beef (shoulder) - 1 kg.
Red onion - 400 g.
Butter - 150 g.
Garlic - 3 cloves.
Vinegar - 1 tsp.
Sugar - 1 tsp.
Water - 100 ml.
Sweet pepper with peas - 2 pcs.
Black pepper with peas - 7 pcs.
Salt - to taste

Preparation:
1. Wash the meat and dry it with a paper towel. Cut into fairly large pieces.
Place on the bottom of pans of the appropriate size in one row. Fill with water.
2. Onions can be red or onion. Cut the onion, put it on the beef.
3. Cut the butter into slices and spread evenly on top of the onion.
Cover with a lid, simmer for 1 hour. If necessary, you can add water.
4. After an hour, add squeezed or finely grated garlic to the meat. Salt, add sugar and two types of pepper. Drizzle with vinegar.
5. Mix all this, cover with a lid and simmer for another 1 hour.
And then everything is as you wish - if you think there is too much liquid, open the lid and simmer until it thickens more.
Everything else depends on the hardness of the meat, then the stewing time should be increased until it becomes more tender.

Eggplant appetizer with tomato

Ingredients:
Eggplant - 1 pc.
Tomato - 1 pc.
Cream cheese - 150 g.
Garlic - 2 cloves.
Greens - 10 g.
Hard cheese - 100 g.
Vegetable oil - 1 tbsp. l.
Salt - to taste
Black pepper - to taste

Preparation:
1. Cut the eggplant into circles. Salt and pepper.
2. Pour oil into a heated pan and fry the eggplants on both sides until golden brown, about 4-5 minutes on each side over medium heat.
Put the finished eggplants out to cool, and for now you can work on other ingredients.
3. Cut the tomato into rings.
Mix cream cheese with squeezed garlic, chopped greens (I have parsley) and a pinch of salt.
4. Grate the hard cheese on a fine grater. We collect the snack directly on a baking sheet lined with parchment.
Put about 1 tsp on the eggplant ring. cheese filling.
5. Another ring of eggplant on top. Next, we lay out a slice of tomato.
6. Do the same manipulations with all the ingredients. It turned out 6 "columns". Put the grated cheese on top and send it to the oven heated to 180 degrees for 10-15 minutes. The cheese should melt and brown a little.

Hungarian goulash soup

Ingredients:
Beef - 500 g.
Potatoes - 500 g.
Sweet pepper - 1 pc.
Onion - 2 pcs.
Garlic - 2-3 cloves.
Tomato paste - 1 tbsp. l.
Cumin - 1 tsp.
Sweet paprika - 1 tbsp. l.
Marjoram - to taste
Salt - to taste
Black pepper - to taste
Water - 2-2.5 l

Preparation:
1. Peel the beef from the films, cut into small pieces.
2. Cut the onion.
3. If you have a piece of fat about 100 g, then melt the fat and fry the meat on it. If not, then on oil.
Put the pieces of beef on a well-heated pan (or fry directly in the pan, if it has a thick bottom), fry, stirring occasionally.
4. When the liquid evaporates, add onions and fry everything together.
5. When the onion begins to turn golden, add tomato paste, cumin, paprika, black pepper, marjoram, salt. Let's mix.
6. Transfer the meat with spices to a saucepan. Pour water so that it only covers the meat, about 1 liter. Cover with a lid, cook on low heat for about 1.5 hours. It is necessary to cook until the meat becomes soft and completely ready. The exact time depends on what kind of beef you have.
7. Cut the potato into small pieces. Cut the sweet pepper.
8. When the meat has become soft, add pepper. Potatoes follow the pepper. I add another 1-1.5 liters of water.
9. Chop the garlic, add it to the soup. Cook until the potatoes are ready (it will be better when they are even slightly boiled). Salt and pepper to taste.
