This light and healthy quiche is one of our favorite ways to bring everyone together around the table.
Because taking care of yourself can be as simple as what’s on your plate, and who you share it with. 🥰
6 eggs
1/2 cup goat cheese
1/2 cup almond milk
1 bunch of asparagus
1 tbsp olive oil
Salt and pepper to taste
Cut asparagus to about 2 inch pieces and saute in a pan with olive oil for about 5 minutes. Meanwhile, mix the remaining ingredients in a bowl. When the asparagus is bright green add all ingredients together in an oven safe pan. Bake for 20 minutes at 425, or until the middle is set.
I saute the asparagus in a cast iron pan and then just pour in the egg mixture.
