🍁 Fall Chicken and Veggie Bowls 🥗
This was very much a “use up what I have in my fridge and pantry meal” and it came out STUNNING. Seriously, Eric and I had leftovers ASAP because it was so good. The sweet potatoes get creamy when they’re roasted and the sausage gets a little char to give the dish some crunch. The fall flavors are next level and you can be proud of all the nutrient-rich goodness you’re getting. Let me know if you try it!

1. Preheat oven to 425 and line a large baking sheet with parchment paper.
2. In a large bowl toss sweet potatoes with a good drizzle of avocado oil (maybe 2 tbsp?) salt, pepper, and garlic powder. Add to one side of the baking sheet.
3. Add chopped sausage to baking sheet.
4. Break up frozen broccoli in bag and add to baking sheet. Drizzle with olive oil, salt, pepper and garlic powder. Shake it around to get everything covered.
5. Roast in oven for 30-35 min or until sweet potatoes are easily pierced with a fork. Halfway through cooking give everything a good mix.
6. While that roasts, make your quinoa. Rinse your quinoa in a mesh strainer and add to a pot with water. Bring to a boil. When it boils, reduce heat to low and cover. Let it simmer for 15 min. After 15 min turn the heat off and let it stand for ten min. Fluff with a fork.
7. Add mixed greens and quinoa to your bowl. When sausage and veggies are done, add those as well, along with any garnishes/toppings you like. I did diced tomatoes the first night and leftover avocado and shredded carrots the second. All were stupendous. 😋
8. If desired add some dressing - this boars head Italian herb is fantastic. Pumpkin seeds for extra nutrition. :)

My garden only grew 5 ears of 🌽 (and only one normal sized - not pictured). BUT my body grew the most beautiful girl, my boy grew a couple of inches, my neighbors dahlias exploded, and my heart grew beyond my wildest imagination. A summer of growth and I am ready for fall. 🍁 🍂 🍲

The Wonderful World of Watercress 🍃
I am happy to report that after the CDC named watercress the healthiest vegetable, I tried it and lived to tell the tale. It was actually super delicious and I’m thrilled I tried it. After much YouTube and TikTok research, here’s what I learned - you can eat watercress cooked or raw, you need to wash it before you eat it, and if you cook it you’ll need more than you think (kind of like cooking spinach).

Raw it has a spicy, peppery flavor that reminded me of radishes. Cooked, it tastes almost like cooked spinach but more fresh. It would be amazing to do raw watercress with something like salmon salad + avocado - something where the creaminess tones down the bite a little.

While I was cooking we were wrapping chunks of fresh mozzarella in the washed watercress leaves and it was 🔥. So that’s also an option.

To Prepare:

This brand had the roots still attached so I cut those off and rough chopped, then I tossed any yellow leaves. If you get watercress with super thick stems you can cut those off, but these were thin so I skipped it.

Next, I rinsed in a colander, placed in a bowl of cold water, and let it sit for 10 min. Then I dumped that water and added more cold water. I let it sit for another 10 min and dumped THAT water out. I don’t know if you *need* to clean watercress this way, but it came out pristine. So use your own discretion.

To cook, I kept it really simple and heated 1 tbsp of olive oil over medium heat and sautéed the watercress. You’ll see it start to shrink down the way spinach does. When it was close to done I added 2 cloves of chopped garlic and a splash of soy sauce. Cook 1-2 min more and serve.

You could totally have this as a super-antioxidant side dish on the side of chicken/fish, or as your greens in a grain bowl, but we tossed it with noodles, tofu, cooked mushrooms, soy sauce, and sriracha. It was 🤤.

We found this particular brand at Sprouts for $3.49, but I also saw it at Whole Foods. I couldn’t find it at Wal Mart or Smiths, but let me know in the comments if you find it somewhere else so more people can try it!

⭐️ 📅 Okay, but *how* do I meal plan? 💫
🖊️ I am not about that gatekeeping life, so I’m here to let you in on how I meal plan every week.

📅 First, meal plan on any day of the week that works for you. The only rule I have is to check your calendar for the upcoming week and account for anything that could interfere- are you eating out with friends one night, or do you have an Isotopes game to attend so you’ll be on a time crunch? Do you work a 12 hour day? Think about the upcoming week and figure out (roughly) what you want to eat based on how much time and energy you’ll have.

🥬 🫘 Second, shop your pantry and fridge. What do you have in there that you should use up? Could you prep a crock pot soup the night before your 12 hour day and use up some veggies? Or do you have a ton of pasta in the pantry, it’s supposed to be over 100 degrees, and a cold veggie pasta salad would work? Think about using leftovers for following meals.

🥪 🌮 Make it easy on yourself and add a few standing meals. For instance, we always do pizza Friday. Whether that’s Dion’s or DiGiorno, we almost always have pizza on Friday. Or, make a plan to make every Tuesday Taco Tuesday and change the type of tacos every week. Or just do something easy like sandwiches every Thursday. Make it as elaborate or as simple as you’d like, but the more you standardize things, the easier it becomes to keep up with.

🗓️ Now that you know what you have and you have a good idea of your plan next week, go ahead and write out the meals you want to make on your calendar, and a grocery list with any ingredients you need. After shopping, note any prepping you need to do during the week.

🧘‍♀️ Finally, be flexible with yourself and your family. There will be days where you absolutely don’t want to make the thing you decided on last week. If something sounds better - go for it. Most of the time you can move meals around or use ingredients in something else. Do your best, do what you can, and eventually meal planning will be second nature.

Tomorrow is the last day to sign up for my spring 2024 Lifesteps Weight Management class. It’s a 16 week program with nutrition education, physical activity, behavior change plans, and group support. We’ll meet via Zoom on Tuesday nights at 5:30 pm MST. The cost is $399+tax and you get access to the classes, participant materials, TWO 30-minute one-on-one sessions with me, food and activity trackers, and access to 11 maintenance sessions.

This program isn’t a quick fix, but if you work hard at it you really can change your life.

I know there’s only so much we can control for in life - accidents happen, random illnesses occur, we encounter things we can’t control - but what about the things we can?

Researchers have found that for weight loss to be sustainable you have to maintain the behaviors for longer than 8 weeks. My program isn’t a diet, it’s not a get-skinny-quick scheme, and it’s definitely not a random shake you drink in place of a meal. My goal for you is to feel in control, feel empowered with nutrition, and feel like you CAN change your life.

My program is 16 weeks, from Jan-May. A lot can happen in 16 weeks. A lot can also not happen. Imagine the changes we could make.
