Want to know what it took to complete all 7 Meals by Jen April meals for my family?
Here’s the “extra stuff” list:
half and half, sour cream, butter, cheddar cheese, parmesan cheese, pre-cut cauliflower, baby spinach, avocado, potatoes, orzo, precooked rice packets, brown rice, tortillas, can of french onion soup, frozen broccoli, frozen green beans, frozen carrots.
I had seasonings and oils on hand.
For 7 meals, that’s really not bad.
So if you’ve ever wondered whether freezer meals still mean a million extra ingredients and a giant grocery haul… nope.
A handful of simple add-ons, easy sides, and you’ve got:
✅ Marry Me Chicken
Added half & half, orzo and spinach at the end in the slow cooker plus cacio e pepe roasted cauliflower.
✅ Cajun Beans & Sausage
Served over precooked rice that I heated up in the microwave and added butter and seasonings.
✅ Mango Chicken
Made quesadillas, tortillas, cheddar cheese, with guacamole and sour cream on top.
✅ Brown Sugar Meatloaf
Served with stick of butter rice and roasted broccoli
✅ Homestyle Chicken & Noodles
Nothing, complete meal
✅ Enchilada Chicken & Rice
Topped with cheddar cheese and sour cream
✅ Texas Roadhouse Pot Roast
I added a few cut-up potatoes to the slow cooker with the meal, then heated up some frozen green beans and carrots that were already seasoned.
Less prep. Less mental load. More “what’s for dinner?” already handled.
