This is absolutely delicious. Don't change a thing! I took this to a dinner party and everyone loved it but I've been making it at home just for us too. It really only takes 10 minutes to prepare everything!

Someone posted this recipe on another page, and I can already see myself overeating when I make it! It’s so good!! The recipe is: 1 cup of mozzarella, 1 cup of parmesan, 1 eggβ€”mix well, sprinkle with garlic powder and Italian seasoning. Line a baking sheet with parchment paper and spray with Pam. Bake at 350Β°F for 15 minutes (I used 12 minutes or until the edges start to brown), then turn on the broiler for 1 minute. Take it out of the oven and enjoy! It also works as a pizza crust. It's called cheese bread..

A comforting Mediterranean-style dish where tender courgettes slowly cook with garlic, herbs, and creamy butter beans to create a rich, hearty meal. It’s simple, nutritious, and perfect served with crusty bread or rice.

Prep Time: 10 minutes

Cook Time: 35–40 minutes

Total Time: ~45 minutes

Servings: 4

πŸ₯— Ingredients

2 medium courgettes (zucchini), sliced into rounds

1 can (400 g / 14 oz) butter beans, drained and rinsed

1 small onion, finely chopped

3 cloves garlic, minced

1 cup vegetable broth

1 cup crushed tomatoes (or chopped fresh tomatoes)

2 tablespoons olive oil

Β½ teaspoon salt (adjust to taste)

Β½ teaspoon black pepper

1 teaspoon dried oregano

Β½ teaspoon smoked paprika

1 tablespoon lemon juice

2 tablespoons fresh parsley, chopped

Optional additions:

Β½ teaspoon chili flakes for heat

ΒΌ cup grated Parmesan or crumbled feta for serving

🍳 Instructions
1️⃣ SautΓ© the aromatics

Heat olive oil in a large skillet or pot over medium heat.
Add the chopped onion and cook for 4–5 minutes until soft.
Stir in the garlic and cook for 1 minute until fragrant.

2️⃣ Add courgettes

Add the sliced courgettes to the pan and cook for 5–6 minutes, stirring occasionally, until slightly softened.

3️⃣ Build the sauce

Pour in the crushed tomatoes and vegetable broth.
Add oregano, smoked paprika, salt, and pepper. Stir well.

4️⃣ Slow cook

Reduce the heat to low, cover, and simmer for 20–25 minutes, stirring occasionally, until the courgettes are very tender and the sauce thickens.

5️⃣ Add butter beans

Stir in the butter beans and cook for another 5 minutes until heated through and creamy.

6️⃣ Finish the dish

Add lemon juice and sprinkle with fresh parsley. Taste and adjust seasoning if needed.

This weeks meal prep and to avoid the comments I do not reheat the meals in the plastic. Also they stay fresh the whole week. It’s two meals a day for 5 days. Also I prep this way because I drive truck for my job and this is the easiest way for me to stay on track.
