Life has been a roller coaster since we moved to Texas but I’m finally getting back into my training and meal prep routine again!
This weekend I tried making healthy β€œChick-fil-a” chicken nuggets and it was a success.
Recipe was super easy and cooked in just 15 minuets in the air fryer.

Macros: 196 cal, 30g Protein, 8g Fat, 2g Carb
Recipe:
4 x 4oz chicken breast cut in chunks
1 egg scrambled
1 cup almond flour with Flavor God everything and garlic salt mixed in

Coat chicken chunks in the egg bowl then roll in almond flour mix and toss in the air fryer for 15 minuets! I’ll try the oven soon to test timing.

My sides are parmesan green beans and garlic roasted carrots.

My transformation from 2016 to 2017 competition seasons has been more about the confidence, stage presence and posing. The right suit, hair, makeup and presentation makes a huge difference!
The fifth time around I definitely feel like I had the diet figured out and know exactly what my body likes to feel good and perform at the gym - nutrient timing is key. I have so many allergies, finally identified and eliminated them out of my diet!
Reflecting on my progress and feedback to figure out what my next move will be but for now I'll be training legs harder than ever!!

Measurements are such an important piece to tracking program progress, shape changes and clothes fitting differently are an even better measure of progress (and more important) than the scale.
Thrilled about my 60 day measurements!! Exactly matching the goals of my training and nutrition but the changes are even better than I expected. I was able to loose 3" off my waist and 3" off my thighs while gaining muscle in my glutes, shoulders and biceps! For the first time ever my calves are actually staying while I'm bumping up the cardio thanks to more plyos and jump rope.

We have lots of celebrating to do this week for our rehearsal dinner, bridal shower and wedding! I'll have a few of my own "desserts" so I can indulge and still feel good. Organic Bone Broth is one of my favorite healthy cooking tricks! It's a great way to add protein into your meals. I cook my quinoa and brown rice in this bone broth to add flavor and nutrients. It's also great as a base for chicken veggie or bean soups.
You can find it at Costco and Fred Meyer in Alaska!
