Leeks! How to prepare and a few ways to use them. Cut in half, then down the center, wash out the dirt, it collects in the stems so running it under water doesn’t work well. Thinly slice. I adde 2 tbsp coconut oil to the pain and several diced fresh garlic. Sauté until bright colors emerge, about 8–10 minutes on medium heat. I added 1/4 cup to my butternut squash and blended then topped with a spoonful for texture. I added a scoop of leeks as a side dish to the Brussel sprouts and chicken cordon bleu. Everyone was happy AND I have some leftovers to add to other recipes this week
