Soffer easy-meal hack:
Slow-cook this soup, distribute it into mason jars and freeze up to 3 months. Makes great grab n’ go lunches. Pretty darn healthy, and in winter the hot soup is such comfort food - especially if you sprinkle some mozzarella on top!

Butternut Squash Curry Soup
Ingredients
8 cups cubed butternut squash (3.5 lb) - can use frozen!
1 can (14.5 oz) chicken broth
1 tbsp butter
½ tsp salt
1 can (12 oz) evaporated fat-free milk
3 Tbsp red curry paste
Crush red pepper (optional)

-In slow cooker, add squash, broth, butter, salt
-Cover on high 4-5h or low 8-10h
-Stir in milk and curry paste
-Immersion blender till smooth
-Cook on high x10 mins
-Top with crushed red pepper

What is Salmonella?

- Major cause of diarrhea in the US and worldwide

- Symptoms usually start within 8-72 hours after consuming contaminated food or water (“food poisoning”), and usually resolves on its own within 4-10 days.

- Symptoms: diarrhea, nausea, vomiting, fever, abdominal cramping
(maybe also fatigue, chills, weight loss, headache)

- Usually not serious, but if the bacteria gets into your bloodstream it can be very serious

- Diarrhea Treatment (from any cause) → drinks lots and lots of water/ gatorade / juice/ broth. Lots. And then drink more. You need to replace all the fluids and electrolytes you’re losing. Dehydration makes you feel awful (and is hard on your kidneys).

-See a healthcare professional if:
Cramps are severely painful
Can’t keep down fluids
Bloody vomit or stool
Fever over 100.4F for more than 2 days
Immunocompromised (from medications, illness or cancer)
Age under 1 or over 50

Prevention:
-Wash your hands - especially after touching chickens, ducks, turtles, or raw meat
-Wash all fruits and veggies before eating - wash melons with soapy water before cutting into them
-Cook meat, seafood, and eggs to well-done.
-Keep fridge before 40F and freezer below 0F.

MONKEYPOX

-Is a common disease in certain parts of Africa, but has been spreading through dozens of countries where it isn’t typical since May 2022.

-Symptoms (can be all or just 1-2 of these):
Fever
Rash (large pustules, may cause scarring)
Swollen lymph nodes
Fatigue
Muscle aches

-Transmission:
*Touching monkey pox lesions/body fluids
*Touching linens or surfaces that have been touched by pox lesions/body fluids
*Large respiratory droplets (prolonged face-to-face contact)

-Vaccine: currently only given to people who think they’ve been exposed to it
-Lasts 2-4 weeks usually, resolves on its own
-Mostly doesn’t need hospitalization
-Isolate from everyone until all pox lesions have scabbed over and fallen off on their own (don’t pick or it’ll scar!)
-If you live in a house with someone isolating because of monkeypox, wear a mask and use gloves if you have to come in contact with them.
-If you’re concerned about a new rash, call your local health department to find out how to get tested (many labs where you do typical blood work with your P*P still can’t test for it)

Any cell in your body can mutate and become cancerous. If a melanocyte (cell that produces color in the skin) mutates (usually from too much sun exposure), it may become melanoma, a dangerous form of skin cancer. It’s important that everyone keeps track of their own moles (I check all mine every January 1st) and be seen promptly by a healthcare professional if they notice any of the ABCDEs happening to their moles:

A = ASYMMETRY. Can you draw a line somewhere down the middle of the mole, flip it over on itself and have it be equal on both sides?
B = BORDER. Irregular border is bad.
C = COLOR. Multiple colors in the mole, or a really dark black mole, can be worrisome.
D = DIAMETER. Bigger than 6mm across should get looked at.
E = EVOLUTION. Is this mole actively growing? Get seen now. This may be the single most important clue something is wrong with this mole.
