Fall 2025, as the seasons begin to change , the focus is on “ enjoying the beautiful colors” with our food as well as in nature .
Roasting large trays of veggies allows your busy workdays /school days to be a bit easier.
My favorite fall vegetables are butternut squash, beets, fennel & Brussels sprouts… the seasonings can be played with but my top choices are Tumeric, black pepper, sea salt ,cinnamon and something with a little kick if you like.
The bruschetta bread/toast are delicious & also easy quick fix , goes well with a delicious soup or salad.

On a roasting tray combine garlic, thinly slides or grates zucchini, sweet tomatoes ,fresh basil , oregano, olive oil sea salt,pepper, red pepper flakes and a little Parmesan
Roast at 400 degrees for about 20 min or until your garlic softens
Stir and add more fresh herbs
Cut your choice of bread ( fresh baguette works for appetizers) drizzle with EVOO crisp in oven 5 min or so top with Bruschetta and extra yummy add a little burratta
