Hot Chocolate Cookies β˜•πŸͺ

Soft, gooey, and cozy cookies that taste just like hot cocoa in dessert form. Easy to make, perfect for weekends, or cold nights in ✨

Ingredients
🧈 1/2 cup (1 stick) butter, softened
🍬 1/2 cup sugar
🍯 1/2 cup brown sugar
πŸ₯š 1 egg
🌼 1 tsp vanilla extract
🌾 1 1/4 cups all-purpose flour
β˜• 1/3 cup hot cocoa mix (powdered, not syrup)
πŸ₯„ 1/2 tsp baking soda
πŸ§‚ 1/4 tsp salt
🍫 1 cup chocolate chips or chopped chocolate
🀍 1 cup mini marshmallows

Instructions
βœ… Cream butter and sugars until fluffy
βœ… Mix in egg and vanilla
βœ… In a separate bowl, whisk flour, hot cocoa mix, baking soda, and salt
βœ… Combine wet and dry ingredients until just mixed
βœ… Fold in chocolate chips
βœ… Chill dough for 20–30 minutes to prevent spreading
βœ… Scoop onto a lined baking sheet
βœ… Bake at 350Β°F (175Β°C) for 9–11 minutes
βœ… Immediately press mini marshmallows on top
βœ… Let sit 2–3 minutes, then return to oven for 1 minute to melt marshmallows

Valentine's Day is always a unique celebration that can take place on any day. Our Valentine's luncheon was a wonderful event, with many families and friends joining our residents. The lunch was delicious, offering a selection of dishes including jumbo shrimp with remoulade and cocktail sauces, stuffed portabella mushroom, filet mignon with wild mushrooms and bearnaise sauce, and sautΓ©ed salmon with lump crabmeat and lemon butter sauce, all served with asparagus, roasted baby potatoes, and creme brul'ee for dessert. Additionally, we had a chocolate fountain with strawberries for dipping, which was a huge hit with everyone.

Easy Red Wine Pot Roast

A rich, comforting one-pot classic that’s full of flavour and perfect for cozy nights in!

Ingredients:
πŸ₯© 3–4 lb beef chuck roast
πŸ§‚ Salt & black pepper
πŸ«’ 2 tbsp olive oil
πŸ§… 1 large onion, sliced
πŸ§„ 4 cloves garlic, smashed
πŸ₯• 3 carrots, chunked
πŸ₯” 3–4 potatoes, chunked
πŸ… 2 tbsp tomato paste (optional)
🍷 1 cup dry red wine
πŸ₯£ 2 cups beef broth
🌿 1 tsp dried thyme (or 2 sprigs fresh)
🌿 1 tsp dried rosemary (or 1 sprig fresh)
πŸƒ 1–2 bay leaves

Instructions:
βœ… Season & sear: Pat roast dry, season with salt and pepper. Heat oil in a large pot or Dutch oven and sear on all sides until browned.
βœ… Remove and set aside.
βœ… Build flavour: Add onion to the same pot and cook 2–3 minutes. Add garlic and tomato paste, stir for 30 seconds.
βœ… Deglaze: Pour in red wine, scraping up the brown bits. Simmer 2–3 minutes.
βœ… Braise: Add beef broth, herbs, bay leaves, carrots, potatoes, and return the roast to the pot. Liquid should come halfway up the meat.
βœ… Cook low & slow:
β€’ Oven: Cover and bake at 325Β°F (165Β°C) for 3–3.5 hours
β€’ Stovetop: Simmer covered on low for 3 hours
β€’ Slow cooker: 8 hours on low or 5 hours on high

Remove bay leaves, shred the meat, and spoon the sauce over everything.
