This Berry Almond Salad is a refreshing blend of spring flavors, ideal for a light lunch or side dish. πŸ“ ​​​​​​​​​​​​​​​​​​Ingredients:

4 cups mixed salad greens
1 cup fresh strawberries, sliced
1 cup fresh blueberries
1/2 cup almonds, sliced or chopped
1/4 cup feta cheese, crumbled
1/4 cup balsamic vinaigrette

Instructions:

In a large salad bowl, combine the mixed greens, strawberries, blueberries, and almonds.
Sprinkle the feta cheese over the top of the salad.
Drizzle the balsamic vinaigrette over the salad just before serving, and gently toss to combine.
Serve immediately, enjoying the fresh, sweet, and tangy flavors.

Brighten up your meals with this Spring Veggie Stir-Fry! Packed with seasonal produce, it's the perfect dish to welcome the spring. 🌼 ​​​​​​​​​​​​​​​​​​ngredients:

1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon ginger, grated
1 cup asparagus, trimmed and cut into 2-inch pieces
1 cup snap peas, trimmed
1 red bell pepper, sliced
1 cup carrots, julienned
2 tablespoons soy sauce (or tamari for gluten-free option)
1 tablespoon honey or maple syrup
1 teaspoon sesame oil
Salt and pepper to taste
Cooked rice or noodles, for serving
Sesame seeds and sliced green onions, for garnish

Instructions:

Heat the olive oil in a large pan over medium heat. Add the garlic and ginger, and sautΓ© for about 1 minute until fragrant.
Increase the heat to medium-high and add the asparagus, snap peas, red bell pepper, and carrots to the pan. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
In a small bowl, whisk together the soy sauce, honey, and sesame oil. Pour this sauce over the vegetables and toss to coat evenly. Cook for an additional 1-2 minutes.
Season with salt and pepper to taste.
Serve the stir-fry over cooked rice or noodles, garnished with sesame seeds and sliced green onions.

Welcome the warmth of spring with this Lemon Herb Grilled Fish. A simple, flavorful meal that's perfect for the season. 🐟 ​​​​​​​​​​​​​​​​​​Ingredients:

4 fish fillets (such as salmon, tilapia, or cod)
2 tablespoons olive oil
2 lemons, one juiced and one sliced
2 tablespoons fresh herbs (such as parsley, dill, or thyme), chopped
Salt and pepper to taste

Instructions:

Preheat your grill to medium-high heat.
Brush both sides of the fish fillets with olive oil and season with salt and pepper.
In a small bowl, mix the lemon juice and chopped herbs. Brush this mixture over the fish fillets.
Place the fish on the grill and cook for 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork.
Serve the grilled fish with lemon slices and a sprinkle of fresh herbs on top.
