Dr. Morgan is sharing her go-to weekly meal prep breakfasts that keeps mornings simple, filling, and packed with protein. This has been on repeat for me lately — easy to make, easy to grab, and easy to customize.
Dr. Morgan’s Banana Protein Breakfast Bake:
1 box Simple Mills Banana Muffin Mix
3 ripe bananas, mashed
Water (amount listed on the back of the box)
Eggs (amount listed on the back of the box)
1 small container of your favorite Greek yogurt
2 scoops of your favorite protein powder
Chocolate chips (optional, but highly recommended 😉 )
Instructions:
Preheat oven to 350°F.
In a large bowl, combine the muffin mix, mashed bananas, water, eggs, Greek yogurt, and protein powder.
Stir until well combined, then fold in chocolate chips if using.
Pour into a greased 9x9 baking dish.
Bake for 33 minutes or until a toothpick comes out clean.
Let cool, slice into squares, and store in the fridge for the week.
In the morning, I warm up a slice in the microwave and top it with peanut butter for some extra healthy fats and staying power. It’s quick, balanced, and keeps me full through a busy morning at the clinic.
You can also make this into muffins — just follow the muffin bake time listed on the back of the box.
