🎉Night of Hope 2025 🎉

This year, the Crohn's & Colitis Foundation - Rocky Mountain Chapter of Hope: Craft for Cures took place November 8. The event raised nearly $300,000 for research, education and support programs designed to help patients, caregivers and medical professionals. 🩺🩺

We’re honored to say, our very own, Joshua Steinberg, MD, was named as the 2025 Healthcare Hero. 💙💙

We congratulate Dr. Steinberg for his ongoing dedication to patient care, advocacy and critical research that helps move the needle forward in the management of Crohn’s disease and Ulcerative Colitis.

"I’m deeply honored to receive the Healthcare Hero Award at the Crohn’s & Colitis Foundation’s Night of Hope Gala,” said Joshua Steinberg, MD, with Gastroenterology of the Rockies ~

“The Foundation’s fundraising fuels the research, support, advocacy and hope that people living with IBD and their caregivers need to not just manage their disease—but to truly thrive."

The Foundation also provides educational resources and funding for providers to help deliver the best care possible to their patients living with UC and Crohn's disease, Steinberg added.

🍁 🍁Here’s a fun fall recipe that’s packed in healthy grains, veggies and fiber. This bowl just might become your next mealtime favorite.

Autumn Harvest Quinoa Salad 🍁
Serves: 4

Ingredients:
• 1 cup uncooked quinoa, rinsed
• 2 cups water or low-sodium vegetable broth
• 1 sweet potato, peeled and cubed
• 1 small red onion, thinly sliced
• 1 tbsp olive oil
• 1 medium apple, peeled and chopped (keep the peel for added fiber)
• ½ cup dried unsweetened cranberries
• ½ cup toasted walnuts or other favorite
• 2 cups rough cut baby kale or spinach
Maple-Dijon Dressing:
• 3 tbsp olive oil
• 1 tbsp apple cider vinegar
• 1 tbsp Dijon mustard
• 1 tbsp pure maple syrup
• Salt and pepper to taste
Directions:
1. Preheat oven to 400°F (200°C). Toss sweet potato and onion with olive oil, salt, and pepper. Roast 25 minutes, until tender and caramelized.
2. In a separate pot, cook quinoa in broth according to package directions.
3. After all ingredients are cooked, combine quinoa, roasted veggies, apple, cranberries, nuts, and greens into a serving bowl.
4. Whisk dressing ingredients and drizzle over salad. Toss it and serve.
5. Enjoy as warm or chilled meal. Excellent option for easy to go lunches.
Fiber boost per serving: ~10–12g (quinoa + sweet potato + apple + kale + nuts + cranberries).
