Sarah's Easy Sweet Potato Chili

1 package Bear Creek Darn Good Chili Mix
2 cans pinto beans drained and rinsed
2 cans black beans drained and rinsed
1 can tomatoes and green chilis
1 6 oz can tomato paste
1 large onion chopped
Minced garlic to taste
2 large sweet potatoes
Brown sugar to taste

chop onion and garlic (if using) and microwave on plate for 4 minutes. Bring 7 cups of water to boil and whisk in soup mix, tomato paste, tomatoes and green chilis, beans and onion and garlic mixture. Reduce heat to medium/low and simmer uncovered for 25-45 minutes stirring occasionally. Clean and microwave sweet potatoes for 5-6 minutes or until soft enough to cut up. Cut the sweet potatoes into cubes and add to soup mixture. Add brown sugar, salt and pepper to taste. You can serve with crackers, tortilla chips or fritos.

( this recipe can be modified by adding more water at the beginning to make it more like soup, adding kidney beans and bell peppers; or leaving out any ingredients you don't like. If you don't like sweet chili leave out the brown sugar. You can just use the Bear Creek Mix as a starter and add the ingredients that you like)
