Tasty Tuesday brought to you by NP Lauren Hunter and a leftover turkey meal.
🦃🦃TURKEY ENCHILADAS 🦃🦃
1. Shred or chop remainder of turkey.
2. In a sauce pan over medium heat add turkey about 4 cups (?), taco seasoning, gravy packet of ur choice (last night we used chicken but turkey is good too), a cup of water, and some Shredded cheese. Bring to a simmer and let it thicken slightly. Turn heat off so rolling the enchiladas is easier.
3. Add desired amount of filling to each tortilla of choice (I prefer carb balance) and roll, line up/fill a casserole dish.
4. Top the rolled/stuffed tortillas w another gravy packet of choice (that was mixed w 1 cup of water and wisked). Evenly over the shells. Top that with shredded cheese.
5. Bake at 400 degrees about 30 min or until cheese is melted to liking.
6. Enjoy!

Our clinic will continue to support local charities and we have all of our great clients to thank for that. We will soon start collecting toys for firefighter community outreach programs for kids and food for Brenden's Backpacks.

Tasty Tuesday Breakfast Idea.
Food prepping will keep you on track and save you that time during the busy work week.
These breakfast bowels are customizable to your liking. Switch out the meat with turkey sausage, hams, bacons etc. Could try sweet potatoes instead of the red potatoes.
Keep your foods creative so you don't get bored and end up in the drive threw.

Hope everyone has a great Halloween tomorrow. Friendly reminder the clinic will be closing early tomorrow at noon so that staff can get home to friends and family in a timely manner.
With the holidays quickly approaching, we plan on starting a food and toy drive at the clinic similar to last year.
