Good Afternoon Everyone!
Some people refer to Tuesday’s as “Taco Tuesday” So in the spirit of that I have an easy chicken taco bowl you can make at home. I didn’t really measure out these ingredients… only the vegan chicken.
First I used a steam-able bag of riced cauliflower and followed the directions on the bag to cook in the microwave. Next I used Morning Star Plant Based Chicken Strips, seasoned them with low sodium taco seasoning and cooked them on the stove. (1 serving, 13 strips, oaccounts for 24 grams of protein) You can definitely switch this out for ground beef or turkey. Up next I added some black beans (extra protein, a 1/2 cup serving is worth 8 grams) which I drained and rinsed. I then sliced a few grape tomatoes. Instead of using iceberg lettuce that really has no nutritional value, I chopped some fresh spinach. (Cholesterol free, source of fiber, vitamin K and A, magnesium and iron) I topped it off with about a tablespoon of guacamole and some southwest tortilla strips.

Happy Friday Eve!
As most of us know, a sweet potato has better nutritional value than a white potato. They carry vitamin c, vitamin a, potassium, low in carbohydrates, promote gut health, contain cancer fighting properties, support your vision, and immune system…just to name a few.
I have been seeing a lot of recipes for sweet potato hash lately, but decided to do my own version of it. Here is what you will need:
1. Tri-color peppers (I used red and yellow)
2. Diced sweet potatoes ( I used a steamable bag)
3. Fresh spinach
4. Ground sausage (I used impossible sausage)
5. Eggs
6. Salt Free Seasonings of Choice
Directions- Ground sausage in olive oil and seasonings. Dice up your peppers, sauté in olive oil as well as seasonings. Steam you sweet potatoes according to the package. I also threw them in the air fryer to crisp them up a bit.
Sauté your spinach and then fry one egg.
Layer you bowl as such… sweet potato, peppers, spinach, ground sausage, and then the egg.

My go to breakfast while I have been training for this half marathon.
Smoothie- 1/2 banana, 4-5 frozen strawberries, 1/2 c frozen blueberries, handful of fresh spinach, 2tbsp ground flaxseed, 1 scoop plant protein, 1tsp ground ginger, 1 cup 0 sugar oat milk.
Oatmeal- 1/3 cup quick oats, 2/3 cup water, sliced banana, 1 tbsp sunbutter, sprinkle of cinnamon.

Good Morning everyone!
Here are some tips for dining out.
We all do it and there is nothing wrong with it. We have to learn how to navigate it. We can still make healthy choices and steer clear of excess calories.

1. Skip the appetizer or use an appetizer plate. By using an appetizer plate you avoid overeating and it allows you to portion out an individual serving.
2. Modify your order. Ask your server if you can omit items from the dish or ask if something can be baked, broiled or grilled.
3. Set a drink limit. Decide on a number of drinks before heading out if you plan on consuming alcohol. If you set a limit to 1 or 2 drinks you stay in control of your diet and goals.
4. Choose a meal that includes protein, at least 2 vegetables, healthy high fiber starch and healthy fat.

Hello everyone! I have gained a number of followers, especially last month, so I wanted to formally introduce myself. My name is Alexandra Nesbitt and I have been a certified nutrition coach for over a year now. How did that come about?! Well, back in 2016 I was having some health challenges and didn’t understand where all of it was coming from. At that time I wasn’t eating necessarily bad but I wasn’t eating all that great either. I went to the doctor for a heart ultrasound and in the process found out I had gallstones!! The tech showed me the image and it was a lot of them. They had not bothered me though. Eventually I was sent to a gastroenterologist and I was given a list of what I could eat from now on. My diet had to change drastically. Thankfully I didn’t need surgery to remove my gallbladder. That alone scared me enough to just make the change. I stuck with that list to a T! I lost a significant amount of weight and then began to incorporate exercise as well as hired a trainer. Fast forward to 2020… I noticed people were constantly asking me how I had lost weight and asking me a advice on healthy food choices. They would always say I was so consistent with my eating. I took that and ran with it! I dedicated the next year to obtaining my nutritional coach certification. Now here we are in 2022 and I’m dedicated to helping others live a healthy lifestyle through food and let them know healthy food eating doesn’t have to be boring!
