If you’re looking for a cozy, balanced meal that fits perfectly into your diabetic meal plan, this Apple Cider Beef Stew recipe is just the thing you need!

Ingredients Include:

• 2 lbs beef stew meat (cut into 1-inch cubes)
• 2 tbsp canola oil
• 3 cups apple cider (unsweetened)
• 1 can (14.5 oz) reduced-sodium beef broth
• 2 tbsp cider vinegar
• 1½ tsp salt
• ¼–½ tsp dried thyme
• ¼ tsp black pepper
• 3 medium potatoes, peeled and cubed
• 4 medium carrots, cut into ¾-inch pieces
• 3 celery ribs, cut into ¾-inch pieces
• 2 medium onions, cut into wedges
• ¼ cup all-purpose flour
• ¼ cup water
• Fresh thyme sprigs (optional)

Directions:

1. In a Dutch oven, heat oil over medium-high. Add beef and brown on all sides. Drain any excess fat.

2. Stir in cider, broth, vinegar, salt, thyme, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 1 hour 15 minutes.

3. Add potatoes, carrots, celery, and onions. Return to a boil, then reduce heat, cover, and simmer for another 30–35 minutes, or until meat and vegetables are tender.

4. In a small bowl, mix flour and water until smooth. Stir into the stew.

5. Bring back to a boil and cook for 2 minutes, stirring until thickened.

6. Garnish with fresh thyme if desired. Serve warm.

This recipe is rich in protein, fiber, and natural flavor, making it a great meal for individuals managing diabetes or looking to eat more mindfully.

I found the Atlanta Medical Clinic on line. After reviewing the credentials of Dr. Jeremias Duarte, I decided to give him a try to see if he could help me with the numbness in my foot that I have been experiencing.I found the front desk employees to be kind and efficient. The in-take doctor was thorough in collecting information about why I was there to see Dr. Duarte and my general condition.Dr. Duarte was friendly, down to earth and shared some information about his background and experience. By the time we finished with our conversation he made me aware of conditions going on with my body that were obvious that I had not even paid attention to. After seeing the x-ray and nerve techs, I felt confident that I would soon be on the road to recovery. Time will tell but so far, so good!
