🥘 Savory Sweet Potato Casserole with Turkey & Vegetables

Ingredients
• 3 medium sweet potatoes, peeled & cubed
• 1 lb lean ground turkey
• 1 tbsp olive oil
• 1 small onion, diced
• 1 bell pepper, diced
• 1 cup fresh spinach (or zucchini, chopped)
• 1 tsp garlic powder
• 1 tsp paprika
• ½ tsp salt
• ½ tsp black pepper
• 1 cup shredded cheese (optional – mozzarella or cheddar

Cooking Instructions
1. Preheat oven to 400°F. Toss sweet potatoes with olive oil, salt, and pepper. Roast for 20 minutes until tender.
2. In a skillet, cook ground turkey with onion and bell pepper over medium heat until browned. Season with garlic powder and paprika.
3. Stir in spinach (or zucchini) and cook 2–3 minutes until just wilted.
4. In a baking dish, layer sweet potatoes and turkey-vegetable mixture.
5. Sprinkle with cheese if using. Bake at 375°F for 25 minutes, uncovered, until bubbly and golden.

✨ Let rest 5 minutes before serving.
