Homemade Grandmother’s Carrot Cake
Ingredients:
• 2 cups all-purpose flour
• 2 cups sugar
• 1 cup vegetable oil
• 4 eggs
• 2 tsp baking soda
• 2 tsp cinnamon
• 1/2 tsp nutmeg
• 1/2 tsp salt
• 3 cups grated carrots
• 1 cup chopped walnuts or pecans
• 1 tsp vanilla extract
Frosting:
• 8 oz cream cheese (softened)
• 1/2 cup butter (softened)
• 3 cups powdered sugar
• 1 tsp vanilla extract
Instructions:
1. Preheat oven to 350°F and grease two round pans.
2. In a bowl, mix flour, baking soda, cinnamon, nutmeg, and salt.
3. In another bowl, beat sugar, oil, eggs, and vanilla.
4. Combine wet and dry ingredients, then fold in carrots and nuts.
5. Pour batter into pans and bake 30–35 minutes.
6. Let cakes cool completely.
7. Mix frosting ingredients until smooth.
8. Layer and frost cake, then top with extra nuts.
