🍝 Meatball Pasta Bake !!🗣️Family Favorite❤️

🛒 Ingredients
• 1½ lbs fully cooked meatballs
• 12 oz penne or ziti pasta
• 3 cups marinara sauce
• 1½ cups shredded mozzarella cheese
• ½ cup grated Parmesan cheese
• 1 tsp Italian seasoning
• Optional: fresh parsley for garnish

👩🏽‍🍳 Instructions
1. Preheat oven to 375°F.
2. Cook pasta until just al dente; drain.
3. In a large bowl, combine pasta, marinara, meatballs, and Italian seasoning.
4. Transfer mixture to a greased Pyrex baking dish.
5. Sprinkle evenly with mozzarella and Parmesan.
6. Cover with foil and bake 30 minutes.
7. Uncover and bake 10–15 minutes until bubbly and lightly golden.
8. Rest 5 minutes before serving.

❄️ Freezer Option
• Assemble, cover tightly, and freeze up to 3 months.
• Bake from frozen at 375°F for 50–60 minutes (remove foil last 10 minutes).

🍣 Salmon with Garlic Spinach

🛒 Ingredients
• 2 salmon fillets
• 1 tbsp olive oil
• 1 tbsp butter
• 3 cloves garlic, minced
• 5–6 cups fresh spinach
• Salt & black pepper (to taste)
• ½ tsp paprika
• Optional: squeeze of lemon

👩🏽‍🍳 Directions
1. Season salmon with salt, pepper, and paprika.
2. Heat olive oil in a skillet over medium heat. Sear salmon 3–4 minutes per side until golden and flaky. Remove and set aside.
3. In the same skillet, melt butter and add garlic. Sauté 30 seconds until fragrant.
4. Add spinach and cook just until wilted (about 2 minutes). Season lightly.
5. Return salmon to the pan or serve over the spinach. Finish with a squeeze of lemon if desired.

Serve with roasted sweet potatoes, rice, or quinoa for a full, balanced meal. Clean plate. No clutter. Elegant kitchen vibes only.

🍗🌶️ Chicken Enchilada Casserole

Ingredients
• 3 cups cooked shredded chicken
• 2 cups enchilada sauce (red or green)
• 8 small corn tortillas, cut into strips
• 2 cups shredded Mexican-blend cheese
• 1 cup shredded cheddar or Monterey Jack
• 1 can (15 oz) black beans, drained & rinsed
• 1 cup corn (optional)
• 1 tsp cumin
• 1 tsp garlic powder
• ½ tsp chili powder
• Salt & pepper to taste

Instructions
1. Preheat oven to 375°F. Lightly grease a casserole dish.
2. In a bowl, mix chicken, beans, corn, spices, and 1 cup enchilada sauce.
3. Layer tortillas in the dish, then chicken mixture, sauce, and cheese.
4. Repeat layers, finishing with cheese on top.
5. Bake 25–30 minutes, until bubbly and golden.
6. Let rest 5 minutes before serving.

Optional Toppings: sour cream, cilantro, avocado, or sliced olives
