Homemade Grandmother’s Carrot Cake

Ingredients:
• 2 cups all-purpose flour
• 2 cups sugar
• 1 cup vegetable oil
• 4 eggs
• 2 tsp baking soda
• 2 tsp cinnamon
• 1/2 tsp nutmeg
• 1/2 tsp salt
• 3 cups grated carrots
• 1 cup chopped walnuts or pecans
• 1 tsp vanilla extract

Frosting:
• 8 oz cream cheese (softened)
• 1/2 cup butter (softened)
• 3 cups powdered sugar
• 1 tsp vanilla extract

Instructions:
1. Preheat oven to 350°F and grease two round pans.
2. In a bowl, mix flour, baking soda, cinnamon, nutmeg, and salt.
3. In another bowl, beat sugar, oil, eggs, and vanilla.
4. Combine wet and dry ingredients, then fold in carrots and nuts.
5. Pour batter into pans and bake 30–35 minutes.
6. Let cakes cool completely.
7. Mix frosting ingredients until smooth.
8. Layer and frost cake, then top with extra nuts.

Lamb Chops with Rosemary Garlic Butter

Ingredients:
• 8 lamb chops
• 3 tbsp olive oil
• 4 tbsp butter
• 4 cloves garlic, minced
• 2 tbsp fresh rosemary, chopped
• 1 tbsp fresh thyme (optional)
• Salt & black pepper to taste
• 1 tbsp lemon juice

Instructions:
1. Let lamb chops sit at room temperature for 20 minutes.
2. Season with salt and black pepper.
3. Heat olive oil in a skillet over medium-high heat.
4. Sear lamb chops 3–4 minutes per side.
5. Remove and set aside.
6. Lower heat, add butter, garlic, rosemary, and thyme.
7. Stir until fragrant.
8. Add lemon juice.
9. Return lamb chops and spoon sauce over them.
10. Cook 1–2 more minutes and serve.

Lobster Risotto (Creamy & Rich)

Ingredients:
• 2 lobster tails, cooked and chopped
• 1 cup Arborio rice
• 4 cups chicken or seafood broth (warm)
• 1/2 cup white wine
• 1/2 cup heavy cream
• 1/2 cup Parmesan cheese, grated
• 3 tbsp butter
• 2 tbsp olive oil
• 3 cloves garlic, minced
• 1 small shallot, finely chopped
• Salt & black pepper to taste
• 2 tbsp fresh parsley, chopped

Instructions:
1. Heat broth in a saucepan and keep warm.
2. In a skillet, heat olive oil and 1 tbsp butter over medium heat.
3. Add shallot and garlic, sauté until soft.
4. Add Arborio rice and stir for 1–2 minutes.
5. Pour in white wine and cook until absorbed.
6. Add warm broth one ladle at a time, stirring constantly.
7. Let each addition absorb before adding more broth.
8. Continue until rice is creamy and tender (about 18–20 minutes).
9. Stir in heavy cream, remaining butter, and Parmesan.
10. Add lobster meat and gently mix.
11. Season with salt and pepper.
12. Garnish with parsley and serve immediately.
