🍽️👨‍🍳 Chef Mark’s Swedish Meatball Demo – A Delicious Hit! 👨‍🍳🍽️

Our residents at Belleview Heights Memory Care had a wonderful time watching Chef Mark in action as he prepared his delicious Swedish meatballs right before their eyes!

From the sizzling pan to the finishing touches, residents enjoyed seeing the cooking process up close—and of course, the amazing aroma that filled the room made it even more exciting. 😋

The best part? Tasting the final product! The meatballs were a huge hit, and there were plenty of smiles around the table as everyone enjoyed this warm and comforting treat together.

Carrot and Walnut Loaf 🥕

Warm, gently spiced, and full of good things. This wholesome loaf is a springtime favourite that works beautifully as a shared baking activity. Walnuts are a rich source of omega-3 fatty acids, which support brain health, making this as nourishing as it is delicious. ✨

Ingredients
🥕 2 cups grated carrots
🥕 2 eggs
🥕 1/2 cup honey or brown sugar
🥕 1/2 cup neutral oil
🥕 1 1/2 cups all-purpose flour
🥕 1 tsp baking soda
🥕 1/2 tsp baking powder
🥕1/2 tsp salt
🥕 1 tsp cinnamon
🥕 1/4 tsp nutmeg
🥕 3/4 cup chopped walnuts
🥕 Zest of 1 orange (optional but lovely)

Instructions
✅ Preheat oven to 350°F (175°C) and grease a loaf tin
✅ Whisk together eggs, honey, and oil in a large bowl
✅ Stir in grated carrots and orange zest
✅ In a separate bowl, combine flour, baking soda, baking powder, salt, and spices
✅ Fold dry ingredients into wet until just combined
✅ Stir in chopped walnuts
✅ Pour batter into the prepared tin and smooth the top
✅ Bake for 45 to 50 minutes until a skewer comes out clean
✅ Cool in the tin for 10 minutes before turning out
✅ Slice and serve warm or at room temperature, lovely with a little butter 🧈

⚾️❤️ Stepping Up to the Plate for Jackie Robinson Day! ❤️⚾️

Our residents at Belleview Heights Memory Care had a wonderful time celebrating National Jackie Robinson Day! We honored this important day with a fun, baseball-inspired afternoon full of great food, creativity, and meaningful moments.

Residents enjoyed classic ballpark treats including mini hotdogs, caramel & cheddar popcorn, and refreshing drinks like Budweiser Zero and root beer. 🌭🍿🥤

The fun didn’t stop there—everyone got creative making their own baseball buddies, adding a personal and playful touch to the celebration. ⚾️ We wrapped up the day by watching The Jackie Robinson Story, reflecting on his legacy, courage, and impact on history.

Our residents have been getting their hands a little dirty—in the best way—as part of our April Go Green initiative in celebration of National Gardening Day and Earth Day! 🌎

Using recycled containers, everyone helped plant seeds that will begin growing indoors before being transferred to our courtyard garden just in time for Mother’s Day. 🌸 It was a wonderful way to promote sustainability while also enjoying a meaningful, hands-on activity.

From scooping soil to planting with care, our residents truly embraced the spirit of gardening. Activities like this not only support our environment but also encourage creativity, connection, and a sense of purpose. 🌼

🎺🎶 A Day Filled with Music & Memories 🎶🎺

Our memory care residents had an incredible time attending the Music Spawns Memory Concert by the Denver Brass 5 at the Smoky Hill Library! 🎵

From the moment the music began, smiles filled the room and toes started tapping. Residents enjoyed a lively and engaging performance, surrounded by friends, community members, and the uplifting power of live music. 💙

Outings like these are so special—bringing joy, sparking memories, and creating meaningful connections beyond our community walls. And of course, a few treats and great company made the day even sweeter! 😊

A big thank you to the Denver Brass 5 and Smoky Hill Library for hosting such a wonderful event—we can’t wait for the next one!
