A fresh, easy-to-make meal is one of the simple pleasures of spring, and this Spring Vegetable Frittata is as nourishing as it is delicious. 🥚 Packed with protein, vitamins, and seasonal flavors, it is a wonderful recipe to support senior wellbeing.

Ingredients
🥚 6 large eggs
🥚 1/4 cup milk
🥚 1 cup fresh spinach, roughly chopped
🥚 1/2 cup cherry tomatoes, halved
🥚 1/4 cup red bell pepper, diced
🥚 1/4 cup crumbled feta cheese
🥚 1 tablespoon olive oil
🥚 Salt and pepper to taste

Instructions
✅ Preheat the oven to 375°F.
✅ In a bowl, whisk together the eggs and milk, then season with salt and pepper.
✅ Heat olive oil in an oven-safe skillet over medium heat.
✅ Add the bell pepper and cook for 2 minutes, then stir in the spinach until wilted.
✅ Add the cherry tomatoes and pour the egg mixture evenly over the vegetables.
✅ Sprinkle feta cheese over the top and cook on the stovetop for 2 to 3 minutes until the edges begin to set.
✅ Transfer the skillet to the oven and bake for 10 to 12 minutes until the frittata is fully set.

Lunch bunch to Hoovers today! Sad to say this place is closing down at the end of next month! This is one of our favorite places to stop & get lunch when in Austin!
