Easy Red Wine Pot Roast
A rich, comforting one-pot classic thatβs full of flavour and perfect for cozy nights in!
Ingredients:
π₯© 3β4 lb beef chuck roast
π§ Salt & black pepper
π« 2 tbsp olive oil

1 large onion, sliced
π§ 4 cloves garlic, smashed
π₯ 3 carrots, chunked
π₯ 3β4 potatoes, chunked

2 tbsp tomato paste (optional)
π· 1 cup dry red wine
π₯£ 2 cups beef broth
πΏ 1 tsp dried thyme (or 2 sprigs fresh)
πΏ 1 tsp dried rosemary (or 1 sprig fresh)
π 1β2 bay leaves
Instructions:

Season & sear: Pat roast dry, season with salt and pepper. Heat oil in a large pot or Dutch oven and sear on all sides until browned.

Remove and set aside.

Build flavour: Add onion to the same pot and cook 2β3 minutes. Add garlic and tomato paste, stir for 30 seconds.

Deglaze: Pour in red wine, scraping up the brown bits. Simmer 2β3 minutes.

Braise: Add beef broth, herbs, bay leaves, carrots, potatoes, and return the roast to the pot. Liquid should come halfway up the meat.

Cook low & slow:
β’ Oven: Cover and bake at 325Β°F (165Β°C) for 3β3.5 hours
β’ Stovetop: Simmer covered on low for 3 hours
β’ Slow cooker: 8 hours on low or 5 hours on high
Remove bay leaves, shred the meat, and spoon the sauce over everything.
