Golden, chewy, and straight from Emma’s Aussie roots 🇦🇺

On Australia Day, Emma whipped up a batch of Anzac bikkies for the family and team - and let’s just say… they didn’t last long. The staff now keep an eye on the oven whenever they smell toasted oats and coconut. 😉

Anzac biscuits date back to World War I. They were made with simple pantry staples like rolled oats, coconut, flour, butter, golden syrup, and baking soda — ingredients that would travel well by ship to Australian and New Zealand soldiers (the ANZACs). Because there were no eggs, the biscuits kept longer, making them practical and nourishing.

Emma loves the history behind them — humble ingredients, made with care, shared in community. That’s really what traditional food is about, isn’t it? Simple, from-scratch baking that brings people together.

Doesn’t get much better than that, mates.

This quote has been on Emma’s fridge since 2020.

Right in the middle of the spelt flour shortage - when prices skyrocketed and good grain was hard to find. A flour bag arrived with this printed on the side:

“The bitter taste of poor quality lingers long after the sweetness of low price is forgotten.”

That one stuck.

When flour was scarce, it was tempting to grab whatever was cheapest and available. But Emma chose to wait for quality grain - organic, properly grown, properly milled. Because when you’re baking bread for your family (and teaching others to do the same), quality matters.

Cheap and quick can feel sweet in the moment.

But quality nourishes long term.

It’s a good reminder on a busy day, hey?

Emma loves storing her ginger juice in wide-mouth mason jars for freezer, and little 2 oz jars for the perfectly portioned juice shot for in the fridge. They’re sturdy, reusable, and make it easy to pour and clean up. Another real moment where having this juice prepped and in convenient little jars at arms reach… is going to make you more likely to drink them!

Here’s the key tip:
👉 Don’t store fresh juice in the fridge for more than 24 hours.

After that, it’s best to thaw a fresh jar from the freezer so you’re getting the most vibrant flavor and quality.

There’s a little piece of Australia tucked inside your package 🦘🌿

One of Emma’s favorite little kitchen staples?

Ginger-juice soaked dehydrated apple slices. 🍎Simple, warming and naturally sweet with a bit of zing.
She’ll slice organic apples thin, give them a soak in fresh ginger juice, then dehydrate low and slow until they’re perfectly chewy. No refined sugar. No additives. Just real food prepared with intention.

They make a beautiful afternoon snack, travel well, and are far better than the packet options at the shops.

Ginger has long been traditionally used to support healthy digestion and circulation, and apples bring gentle fiber — a lovely combination when you’re focusing on gut health in a practical way. (As always, this is about supporting the body’s natural processes, not treating or curing anything.)
