Do you always have to slam the stem?
Not necessarily. Like every element of the fit, handlebar position is unique to the rider's measurements and their style of riding. One challenge with modern mountain bikes is the front end stack- longer travel forks and taller head tubes can raise the position of the bars relative to the saddle height. For riders with shorter inseams (lower saddle height) and a preference toward climbing or long distance efforts, being able to lower the bars will improve efficiency and comfort.
Speaking of comfort. One physical symptom to look out for is upper trapezius tightness. When the bars are too high the rider may shrug the shoulders up to get the shoulders away from the bars.
Working with a can help eliminate the guess work by using the right tools- in this case a sizing stem. If you're trying to find the right position, once you've spend hundreds of dollars on different stems and countless hours experimenting with riding positions, the cost and time invested in a good fit doesn't seem so far fetched.
