Mexican & TexMex are 2 of my favorites which is why I dedicate at least 1 day a week to fulfill that craving. Enchiladas are definitely one of my favorites and this week does not disappoint. This recipe makes 2 serving.

Breakfast Enchiladas
4 GF Low Carb Tortillas
4 oz Chorizo
4 Eggs
1 C Mexican Melting Cheese
12 oz Can Red Enchilada Sauce

Brown Chorizo in a skillet. Add eggs and cook until done. Divide 4 portions of egg mixture and fill tortillas with a portion + 1 Tbsp cheese, and roll into Enchiladas. Pour 1/3 of Enchilada sauce in a baking dish. Place enchiladas on sauce and pour remaining sauce over all. Sprinkle remaining cheese over all. Bake at 375° for about 25-30 minutes.

Starting the year off right with easy and delicious recipes to keep your family on track and reduce stress. Below is the first recipe of the new year and I sure enjoyed it.

Carmelized Onion & Bacon Quiche
Serves 4
3 strips Bacon
1 Small Onion, diced
4 Eggs
1/2 C Heavy Cream
1 C Swiss Cheese, shredded
1/2 tsp Ground Pepper
1/4 tsp Sea Salt

Bake bacon in the oven at 375° for about 20-25 minutes remove from baking sheet to clean dish towels to remove excess grease. Pour grease from baking sheet to a skillet and add onions over medium heat for about 8-10 minutes constantly stirring until golden brown. Add crumbled bacon, onions and cheese to a baking dish. Whisk together eggs, cream, salt and pepper and pour over cheese, bacon and onions. Bake at 350° for about 30-40 minutes.

I love simple meals and this recipe only has a few steps and it is so perfect for a Sunday dinner.

Roasted Chicken & Vegetables
1 Whole Chicken
2 C Carrots
2 Stalks Celery
1 Sm Onion
8 Fingerling Potatoes
1/8 tsp Smoke Seasoning
1/4 tsp Garlic Powder
1/4 tsp Parsley
1/4 tsp Sea Salt
1/2 tsp Ground Pepper
1 C Water

Place chicken in a large crockpot. Combine seasonings and sprinkle half of it over the chicken. Add water to the crockpot and cook on high for 3hrs. Add fingerling potatoes and chopped onion, celery and carrots. Sprinkle remaining seasonings over vegetables and cook an additional hour on high. Remove chicken and vegetables from crockpot and place on a baking sheet. Broil in the oven for about 5-10 minutes. Save broth from crockpot in a large jar for future use.

These two recipes were really simple, tasty and budget friendly. I'd love to hear from you and see what you think about these recipes.

Tomato Soup w Grilled Cheese
2 Tomatoes
1/2 Sm Onion
12 oz Can Diced Tomatoes
1 Sprig Rosemary
1 Sprig Basil
1 tsp Thyme
1 Tbsp Garlic, minced
1 C Hot Water
1 Tbsp Vegetable Bouillon
1/4 C Heavy Cream
1/2 C Parmesan Cheese, grated
1 Tbsp Sweetener
1/8 tsp Sea Salt
1/4 tsp Ground Pepper
Combine everything except cream and cheese in a food processor. Pour into a crock pot and cook on low for 8hrs or high for 4hrs . Add cream and parmesan and stir until cheese is melted.
Enjoy!!!

Quesadilla Pockets
4 oz Chorizo
4 oz Chicken Breast
1 tsp Taco Seasoning
1/2 sm Onion, diced
4 Tbsp Salsa
1 C Quesadilla Cheese
4 GF Low Carb Tortillas
Preheat oven to 400°
Saute chicken, chorizo and taco seasoning over medium high heat until cooked through. Cut halfway through one side of the tortilla as if it's a piece of pie, but only one side of the piece. Imagine the tortilla being 4 sections. Add meat mixture to the section directly above the cut. Sprinkle 1 Tbsp cheese over meat and fold the flap over meat. Add 1 tbsp salsa to the next section and fold over the triangle. Add onion to the final triangle and sprinkle 1 Tbsp cheese over onion and fold over the last section. Repeat with remaining tortillas and place on a baking sheet. Bake at 400° for about 15 minutes.

Ok we are doing a twofer. Caprese Quiche and Eggplant Casserole are both vegetarian options that are so satisfying even for a meat eater.

Caprese Quiche
4 Eggs
1/2 C Heavy Cream
2 C Mozzarella, shredded
12oz Can Petite Diced Tomatoes, drained
12 Leaves Basil
2 Tbsp Balsamic Reduction
1/4 tsp Sea Salt
1/2 tsp Ground Pepper

Add tomatoes to the bottom of a baking dish. Sprinkle cheese over tomatoes. Combine eggs, cream, basil, salt and pepper in a food processor and pour over tomatoes and cheese. Bake at 350° for about 45 minutes. Drizzle with balsamic reduction.
Enjoy!!!

Eggplant Casserole
1 lrg Eggplant, 1/2" sliced
1 C Mozzarella, shredded
1/2 C Parmesan, shredded
2 C Tomato Sauce -
28oz Can Crushed
Tomatoes
1/2 C Water
1 Tbsp Basil
1 Tbsp Thyme
1 tsp Rosemary
1 tsp Garlic Powder
1 Tbsp Onion Powder
1/8 C Sweetener
1/4 tsp Sea Salt
1/2 tsp Ground Pepper
Add all ingredients to a
small crockpot and cook
on low for 8hrs or high
for 4hrs.

Add sauce to bottom of a baking dish. Then, layer Eggplant, Sauce, & Cheese in that order.
Bake at 400° for 30-45 minutes.
Enjoy!!!
