It's true. And I am proof!
Not only are our pickles fresh, delicious, and go with everything, but, they are actually super good for you too. It has been proven that people who eat pickles daily not only live longer, but are happier, too, and tend to have less health problems overall. While our fresh pickles don't have the same gut microbial effect of it's fermented cousins, they are a great low calorie, low carb, all natural ingredient that is a great way to impart huge flavor in any dish without all the additional preservatives you see in canned store products.

My favorite part about them is the burst of flavors you get from our small batch pickles and the high quality crunch. There's nothing quite like it and I hope you'll give us a try! We'll be at the Beaverton Farmer's Market starting tomorrow throughout the season every other weekend with our artisan pickles to sample and purchase as well as some of our gourmet meal items. When I get hate for showing up in a plus size body especially for having strong opinions, two things become very clear.

1. Seeing someone love themself unapologetically forces a HARD introspection. If all you can do is come at me for my weight, I've got news for you that s**t don't hurt- youre going to have to try harder, and also, this is a you problem.

2. Seeing the haters comments make me just want to post more. Maybe next time I'll take my belly out, too 🀣 Thanks for the engagement, guys.

I'm out here doing s**t for myself for once and damn it feels so good. And I love how angry it makes people to see a person in a bigger body have confidence.

I'm down 8lbs so far for the year and there's what I've been doing different than ever before.

1. Mindset shift πŸ’― πŸ‘ŒπŸΌ
It's all about the small wins and everyday choices - progress over perfection and listening to your body. Focus on not restricting but limiting portion sizes is much more sustainable long term

2. More movement πŸ’ͺ
Mondays I walk roughly 10 miles in the kitchen, and for the longest time it would take me the entire week to recover. Incorporating a 1 mile walk 3 days a week and adding some strength training each day has helped me tone, feel stronger and motivate me to keep pushing to see those results I want.

3. More water πŸ’§
Most people are dehydrated af. I generally do a pretty good job at sticking to it, but having a big jug you love to refill is the best, and working out forces you to hydrate regularly especially if you are a sweater. Adding a hydration pack can be your savior.

4. More protein πŸ– πŸ—
Focusing my meals and snacks around protein has absolutely transformed my journey. Not only does it help keep you full longer, but it promotes muscle growth and assists in weight loss. Nobody likes going to bed on an empty stomach, so if that means you need to have a late night snack so be it!!

You have to try this one out. Let me know what you think!!!
Ingredients-
1lb ground pork (or tofu)
2ea carrots- grated
3 lg cloves garlic- grated
1 in k**b ginger - grated
1/2 white onion - grated
Green onion 1 bunch - separated (whites for meat, greens for garnish)
1 tsp Sesame oil
2 tsp Soy sauce or tamari
1 Tb oyster sauce
1 tsp rice vinegar
2 ea egg whites

1 pack dumplings wrappers
1/2 cup chicken broth or stock (or bone broth)
S/P to taste

To Make:
1. Prepare steamer on stove top or make water bath with boiling water and set oven to 425 degrees
2. Spray pan with non-stick stick spray.
3. Combine all ingredients in bowl and use hand to mix thoroughly. (Season with s/p and test flavor by making a small patty and searing in a pan.
4. Once seasoned, use a spatula to spread meat evenly on the bottom, then top with layer of wonton wrappers. Repeat until filled, leaving 1/2 inch at top.
5. Top with broth, then place in steamer or, Cover with plastic wrap and foil, then place in water bath and in the oven 35-40 mins or until internal temp is 165.
6. Top with chili oil and green onions and enjoy!!!

To clarify for those who think this is some kind of rage bait or attention grabbing s**t... this is my business we are talking about. My livelihood. Not only am I feeling vulnerable and violated, but seeing unkind comments are just not necessary. I should have listened to my gut but as a nice human being I didnt. If I let every negative incident that happened to me crush and weigh me down I would have quit thus business a long time ago. I am learning from my mistakes, but dont for a second think my kindness is weakness because I do know a lot of people and am going to figure out how to track these people down. Who wants to help?

You know I love me a good snack plate any time of day. Especially when it's filled with savory foods high in protein that will help keep me full and my body powered for the day ahead.
