This slow cooker lentil + beet soup is full of plant protein, veggies, and anti inflammatory goodness..perfect for storm weekends and recovery days.

Slow Cooker Green Lentil + Beet Protein Vegetable Soup

Ingredients
β€’ 8 carrots, peeled and chopped
β€’ 7 stalks celery, chopped
β€’ 1 onion, diced
β€’ 2 beets, peeled and chopped
β€’ 6 cloves garlic, minced
β€’ 1 1/3 cups dried green lentils (dry)
β€’ 8 cups Kirkland bone broth
β€’ 1 tsp smoked paprika
β€’ 1 tsp dried parsley
β€’ 1 tsp dried thyme
β€’ 2 tbsp prepared pesto
β€’ Salt and pepper, to taste

Instructions (Slow Cooker)

Add all ingredients to the slow cooker.Stir well to combine.Cover and cook on: β€’ Low for 8 hours
OR
β€’ High for 4–5 hours
Once lentils and vegetables are tender, taste and adjust seasoning if needed.Serve as-is, or blend a portion for a thicker texture if desired.JI protein shake chocolate 24 g of protein
