Time to plant! Camp food to the rescue!

Try this amazing Honey Mustard Chicken Salad this Labor Day weekend, shared by our very talented front desk receptionist Ciarra!

Prepare the following at home & store in separate containers, then mix fresh at meal time (remember to bring a large bowl camping):
1 rotisserie or 2 # grilled chicken, shredded & cooled
1/3 cup feta crumbles
1 small box fresh strawberries, slice at campsite
2 heads romaine lettuce, washed & torn into bite size pieces
1/2 cup sliced almonds
3 scallions diced
3/4 cup fresh or frozen corn
2 avocados - slice & add just before eating

Mix dressing ahead, travels well in mason jar:
1/3 cup veganaise or mayonnaise
1 Tbs Dijon mustard
2 Tbs honey
1-2 Tbs water - to desired consistency
1/4 tsp salt
Fresh ground pepper
