Chicken & Roasted Cherry Tomato Creamy Linguine 🍗🍅
This bright and creamy pasta brings a burst of flavor to your table—juicy chicken bites, sweet roasted cherry tomatoes, and tender linguine all tossed in a rich garlic-parmesan cream sauce. It’s the perfect mix of cozy and fresh, with every twirl offering sunshine and comfort in one. 💛🍝
📝 Ingredients:
12 oz linguine
1 lb chicken breast, cut into bite-sized pieces
2 cups cherry tomatoes
2 tbsp olive oil
3 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
½ cup milk
1ÂĽ cups freshly grated parmesan cheese
Salt, black pepper, garlic powder, paprika
Optional: fresh basil, red pepper flakes, extra parmesan for garnish
🔥 Instructions:
1. Roast the tomatoes: Preheat oven to 400°F (200°C). Place cherry tomatoes on a baking sheet, drizzle with 1 tbsp olive oil, and season with salt and pepper. Roast for 12–15 minutes until soft and blistered. Set aside.
2. Cook the pasta: Boil linguine in salted water until al dente. Drain and set aside.
3. Cook the chicken: Season chicken with salt, pepper, garlic powder, and paprika. In a large skillet, heat remaining olive oil over medium-high heat. Sear chicken until golden and fully cooked, about 6–7 minutes. Remove and set aside.
4. Make the sauce: In the same skillet, melt butter. Add minced garlic and cook for 1 minute until fragrant. Stir in heavy cream and milk, bringing it to a gentle simmer for 3–4 minutes until slightly thickened.
5. Add the cheese: Stir in parmesan until melted and creamy. Adjust seasoning with salt and black pepper.
6. Combine everything: Add cooked linguine, chicken, and roasted tomatoes to the skillet. Toss gently until coated in the creamy sauce.
7. Garnish and serve: Finish with fresh basil, red pepper flakes, and a sprinkle of parmesan.
