Lions Mane and Nameko (Butterscotch mushroom) are on deck! You all know Lions mane is awesome, but did you know Nameko mushrooms are huge in Japan? They are also a main ingredient in Miso soup as their waxy/gelatinous caps help to thicken soups. Nameko have a short shelf life though, which is why they aren’t shipped to the US often. They should be used within 4-5 days of harvest. Nameko is said to have a rich and slightly fruity taste, the caps are covered in a thin protein rich gel/wax to keep them from drying out in the wild. They cook up like a champ though and go good in anything you’d normally put mushrooms in.

The “Bismarck Oyster” test run was successful! 1.5 lb cluster with lots of caps!

FUN FACT: (also slightly terrifying)

The LARGEST living organism is the Honey mushroom. It covers and area of about 1,665 football fields 3 feet deep in the Pacific Northwest and is estimated to be 2200+ years old. While above ground you only see a pretty mushroom and some dead clusters of trees, underneath lurks this (see picture) creepy mycelial network.

I grew out some mycelium to see for myself the horror, let’s hope it doesn’t develop a taste for humans! This mycelium will wrap around tree and other plant roots and eventually up the bark stealing water and nutrients and devouring the dying wood. On a positive note, we can eat it! When cooked it has a slightly sweet earthy taste. Take that, devourer of trees!
