Mediterranean Chickpea Salad Recipe
Chickpeas - 2 cans drained & rinsed
Cherry Tomatoes - 1 pint halved
Cucumber - 1 chopped
Red Onion - 1/2 diced
Bell Pepper - 1 chopped
Feta Cheese - 1/2 cup crumbled
Optional
Avocado - 2 medium chopped
Garnish with fresh parsley leaves
Serve with flatbread and hummus
