These are my spring version of those soft, nostalgic Lofthouse cookies… but with a fresh blueberry lemon twist 🍋🫐✨

They’re pillowy, lightly cakey, and have that classic bakery texture — but made with the Vava Vanilla mix so they’re easy and gluten-free.

The lemon keeps them bright, the blueberry frosting makes them feel a little extra, and the texture is exactly what you want in a Lofthouse cookie.

Soft, simple, and actually so good.

Save this one for spring baking 🌿🍋🫐 BLUEBERRY LEMON LOFTHOUSE COOKIES (DILETTOSO — SOFT + FLUFFY)

Soft, pillowy, true Lofthouse-style cookies with a bright lemon finish and a dreamy blueberry frosting.

INGREDIENTS:

Cookies:
• 1 ½ cups Dilettoso Vava Vanilla Mix
• 2 tbsp cornstarch (keeps that classic soft, fluffy texture)
• ½ tsp baking powder
• pinch salt
• ½ cup sugar
• ¼ cup butter, softened
• 2 tbsp oil (extra softness)
• 1 egg
• 2 tbsp sour cream (signature Lofthouse texture)
• zest of 1 lemon
• 1–2 tbsp lemon juice

Frosting:
• ¼ cup butter, softened
• 1 ½ cups powdered sugar
• 1–2 tbsp milk
• 2 tbsp blueberry powder OR mashed blueberries
• squeeze lemon juice

INSTRUCTIONS:
1. Preheat oven to 350°F
2. Cream butter + sugar
Beat until light and fluffy (this step matters for texture)
3. Add wet ingredients
Mix in egg, oil, sour cream, lemon zest + juice
4. Mix dry ingredients
Dilettoso mix + cornstarch + baking powder + salt
5. Combine
Slowly mix dry into wet → soft dough
6. Chill 30 minutes
(this is what gives you that thick, fluffy bakery texture)
7. Scoop + gently flatten
Keep them thick (don’t over-flatten)
8. Bake 9–11 minutes
Do NOT brown — they should stay pale and soft
9. Cool completely
10. Frost generously + top with blueberries ✨
