It’s pumpkin season! 🎃 Snack healthy with these Pumpkin Chocolate Chip Energy Bites 🤤 Add your favorite collagen protein powder from the Hub for extra benefits! 💪
Recipe:
1 1/2 cup (140g) oatmeal
1/2 cup (115g) pumpkin puree
1/2 cup (56g) ground flaxseed meal
1/4 cup (40g) chia seeds
1/4 cup (56g) chocolate chips
1 cup (250g) nut butter (I am using cashew butter)
3 tbsp maple syrup
1 tbsp pumpkin pie spice
1/3 cup water (optional, if needed)
- Add all ingredients, besides the water, into a large bowl (pro tip: use a food scale for an easier clean up)
- Mix all ingredients until well combined
- Gradually add water a tbsp at a time until the texture of the mixture is sticky and well combined (may not use all 1/3 cup)
- Using a 1.5 tbsp cookie scoop, or a spoon works too, scoop the mixture into the palm of your hand and roll into a ball
- Place on a parchment lined plate or baking sheet
- Make sure the energy bites are not touching and place in the freezer.
- Once frozen for at least two hours, remove from baking sheet and store in a container in the freezer until you’re ready to enjoy!
