This festive time of the year is all about festive treats.

While I usually make a traditional trifle, I tried this Lemon & Berry Trifle for a change.

While definitely yummy, I still prefer the more old fashioned trifle that we all grew up with, which was made with sponge cake, homemade custard, canned or fresh fruits, whipped cream, and jelly. I wish I had a recipe to share, but I honestly just wing it according to which fruits are in season, and how much time I have.

Traditional South African milk tart is very similar to a Portuguese custard tart, and is absolutely delicious!!

Milk Tart crust
125 g butter
1/4 Cup sugar
1 egg
2 tsp baking powder
2 Cups flour

Cream butter and sugar, add egg and mix well. Add flour and baking powder to make a soft dough.
Roll out the dough -5mm (1/4 inch) in thickness and line a pie plate, or mini tart bases.
Chill in refrigerator while preparing the filling.

Filling
1 litre milk
3 eggs
1 tsp vanilla extract
1 Cup sugar
100 ml corn starch

Bring the milk to a boil.
Whisk together eggs, sugar and vanilla extract. Add the corn starch and whisk until smooth.
Whisk in the egg mixture to the milk and return to the heat.
Whisk until it's thick and smooth
Pour mixture in the chilled crust and dust with cinnamon.
Bake at 350 degrees for 35 minutes(large) or 20 minutes for smaller tarts

Milk tarts should be stored in the refrigerator, and are best enjoyed when chilled.

Madeira cake

Sometimes you need to make something quick and easy for tea!

Madeira cakes are quick and easy to make, and are so versatile. You can add lemon or leave it out, top with a plain or flavoured glaze, or enjoy as is.

Ingredients

125 g butter
1 Cup sugar
2 eggs
1 tsp vanilla essence
grated rind of 1 lemon or 1 orange (optional)
2 Cups flour
2 tsp baking powder
Pinch salt
1 Cup milk

Method

Cream butter and
sugar till light and fluffy
Beat eggs and add them to the mixture one at a time.
Add vanilla and rind(if using)
Sift flour, baking powder and salt
Add the dry ingredients to the cream mixture alternatively with milk. Start and end with the milk mixture.
Grease 2 loaf tins and bake at 350 for 50-60 minutes.

Who doesn’t love yummy sausage rolls? A wonderful accompaniment to soup, a great appetizer, and a lovely dinner served alongside a fresh green salad. So easy to make with readymade Pepperidge farm puff pastry!

I use the Myrna Rosen recipe (as attached), as it makes a lovely moist beef filling, and a nice crisp pastry.

I made rock buns yesterday which were absolutely delicious, a real taste of home!!

I used this recipe as a base, and made the following changes:
I. I increased the baking powder to 2 teaspoons
2. I omitted the mixed spice
3. I added about half a teaspoon of orange zest
4. I used light brown sugar, as that is what I had at home.
5. I used raisins instead of mixed dried fruit
6. I sprinkled regular sugar on top prior to baking
7. I baked at 400 for about 5 minutes, and then at 350 for another 20/25 minutes.

Fish cakes

Fish cakes not only make a wonderful meal, served hot or cold, but are fabulous as leftovers straight out of the refrigerator!

I did not follow a recipe for these yummy fish cakes, but combined the following ingredients:

2.5 -3 pounds of cod (you could use any white fish that flakes easily)
3 carrots
3 celery stalks
1 large onion
3 eggs
Approximately half a cup of fresh or boxed breadcrumbs
1 T dried parsley
1 T fish spice

This is what I did:
1. I steamed the fish in the microwave for 15 minutes with 3 bay leaves, and about 8 dried black peppercorns, and about 1/3 of a cup of tap water.
2. While the fish was steaming, I prepared the veggies by mincing them together in the food processor
3. Once the fish is done, drain the liquid, remove the peppercorns and bay leaves, and flake the fish
4. Then combine all the remaining ingredients with the flaked fish and veggies
5. Roll the fish in an additional half a cup of breadcrumbs or panko crumbs. I season the crumbs fist with additional fish seasoning.
6. Fry the fish in a little canola/ vegetable oil on medium heat until browned all over
7. Enjoy!!!

TIP: I usually prepare the fish cakes a few hours prior to frying, and then refrigerate them. This gives them a few hours to set, and ensures that the crumbs adheres to the fish cake!

Prego rolls

When you’re making South African Prego rolls for dinner, you have no option but to make fresh Traditional Portuguese rolls!

Ingredients
330 g White bread flour
1 1/4 tsp salt
5 g dry instant yeast
2 tsp sugar
2 Tbsp vegetable oil
340 ml lukewarm water

Method
In a bowl combine all ingredients and add water. Mix with Kitchenaid and dough hook for about 10 minutes until the dough reaches full dough consistency.
Transfer the dough to a slightly oiled container and cover with plastic until it is doubled in size, about 1 hour.
Place the dough on a floured counter. Pre shape each roll, of about 86 grams each, and let them rest for 15 minutes.
Shape the rolls into balls. Flatten each roll with your flat hand. Make an indent in the middle of the flattened dough with the side of your hand and fold in half.
Take a large baking tray, sprinkle tray well with flour. Place the rolls on floured tray with indented side down. Leave enough space between each roll for rising.
Cover with tea towel and leave for 30 minutes to proof. Once proofed flip over the rolls that the indent side is facing up. Sprinkle with a little more flour over the tops.
Pre-heat the oven to 500 f (or 250 c).
Bake for 13 - 15 minutes until brown.
