Onion pie is a savory dish that combines the sweetness of caramelized onions with a creamy and cheesy filling, all baked in a pie crust.
A basic recipe for a delicious onion pie:
Ingredients:
For the Pie Crust:
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3-4 tablespoons ice water
For the Onion Filling:
4 large onions, thinly sliced (you can use a mix of sweet and yellow onions)
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
Salt and pepper to taste
1 cup grated Gruyere cheese (or Swiss cheese)
1/2 cup grated Parmesan cheese
3 large eggs
1 cup whole milk or half-and-half
Instructions:
1. Prepare the Pie Crust:
a. In a food processor, combine the flour and salt. Pulse to mix.
b. Add the cold, cubed butter to the food processor and pulse until the mixture resembles coarse crumbs.
c. With the food processor running, gradually add the ice water, one tablespoon at a time, until the dough starts to come together. You may not need all the water.
d. Turn the dough out onto a lightly floured surface and knead it gently a few times until it forms a cohesive ball.
e. Flatten the dough into a disc, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.
2. Caramelize the Onions:
a. In a large skillet, heat the olive oil and butter over medium-low heat.
b. Add the sliced onions, garlic, thyme, salt, and pepper. Cook, stirring occasionally, for about 30-40 minutes, or until the onions are soft, browned, and caramelized. Remove from heat and let them cool slightly.
3. Preheat the Oven:
Preheat your oven to 350°F (175°C).
4. Roll Out the Pie Crust:
a. On a lightly floured surface, roll out the pie crust to fit a 9-inch pie dish. Trim any excess dough from the edges.
b. Prick the bottom of the crust with a fork to prevent it from puffing up during baking.
5. Assemble the Pie:
a. Sprinkle half of the grated Gruyere cheese over the bottom of the pie crust.
b. Spread the caramelized onions evenly over the cheese.
c. In a bowl, whisk together the eggs and milk. Pour this mixture over the onions.
d. Top with the remaining Gruyere cheese and the grated Parmesan cheese.
6. Bake the Pie:
Place the pie in the preheated oven and bake for about 30-35 minutes, or until the filling is set and the top is golden brown.
7. Serve:
Allow the onion pie to cool slightly before slicing and serving. It's delicious warm or at room temperature.
