Easter vibes without the sugar crash 🙌

These High-Protein Carrot Cake Muffins are soft, naturally sweet, and packed with protein to keep you full (and on track).

✨ ~20g protein per serving
✨ No refined sugar
✨ Perfect for breakfast, snack, or post-workout

**Ingredients:**

* 1 cup oat flour
* 1 scoop vanilla protein powder
* 1 tsp baking powder
* ½ tsp cinnamon
* ¼ tsp nutmeg
* 2 eggs
* ½ cup Greek yogurt (plain, nonfat or low-fat)
* ¼ cup unsweetened applesauce
* ¼ cup maple syrup or monk fruit sweetener
* 1 cup finely grated carrots
* 1 tsp vanilla extract

**Optional add-ins:** walnuts, raisins, or sugar-free chocolate chips

**Instructions:**

1. Preheat oven to 350°F
2. Mix dry ingredients in one bowl
3. Mix wet ingredients in another
4. Combine and fold in carrots + add-ins
5. Pour into muffin tin (makes ~8–10 muffins)
6. Bake 18–22 minutes
