Use the leafy tops from your root veggies!

This is especially useful when you’re buying organic veggies, since lots of organic veg is sold whole with its beautiful leaves included ✨

Root veggie greens are full of nutrients and they’re extremely versatile. So eat those greens instead of tossing them out.

You can do this with carrot tops, beet greens, turnip greens, radish greens… and the list goes on! They all go great in soups, sautees, and smoothies (you can even make pesto out of carrot tops).

This smoothie is one of Jo's go-to's. Here's how you make it:
✅ 1 inch ginger
✅ ½ bunch cilantro
✅ 1 bunch parsley
✅ 2 stalks celery
✅ 2 handfuls of spinach
✅ ½ lemon
✅ 2 cups water (swap water with broth to enjoy this smoothie as a hot veggie soup!)

Smoothies like this one are one of our favorite ways to get nutrient dense food into our diet.
