Winter herb spotlight with Rachel- Daikon Radish!
It's freezing out, you've been eating hearty stews and maybe a little more than usual during a holiday meal. It's settling like a brick in your stomach and you feel lethargic. You're starting to get heartburn, you feel stuck in place. Enter the hero of this story: the white radish.
Called daikon (big root) in Japanese, bai luobo (white radish) in Mandarin, dak kwang mu in Korean, and sometimes icicle radishes or lady fingers (creepy!) in English - this vegetable is an east Asian winter staple. It's typically eaten to move food stagnation and clear heat - both problems that can arise from heavy winter foods and being relatively sedentary during the cold season. In biomedical terms it's high in vitamin C and potassium but low in calories - providing a refreshing immune boost during cold and flu season. Daikon can be eaten raw, cooked, or pickled, and every part of the plant is edible.
