Sweet potato chickpea quesadillas. Inspiration from Yum!!! I changed a few things to make it my own:

I left out the hot sauce because I’m a wimp and added spinach greens for more greens since I’m . I also didn’t use oil to fry because I’m

This is on my regular rotation. It’s from It’s their stuffed peppers but I use this filling in burrito bowls, on top of salads, in wraps and more. Love the versatility of it. It freezes great too. I make a big pot and then put the rest in the freezer and bam—quick week night meal. I used quinoa instead of brown rice and made my own taco seasoning:

1 tablespoon chili powder

¼ teaspoon garlic powder

¼ teaspoon onion powder

¼ teaspoon dried oregano

½ teaspoon paprika

1 ½ teaspoons ground cumin

1 teaspoon black pepper

I can’t do a lot of tomato so I left the tomato sauce off the top but I did use it in the stuffing.

Amazing leftover dinner. Had this pulled together in 10 minutes. Left over veggies chopped up and added to some rice noodles with coconut aminos, garlic, and a teeny bit of lemon juice. Added a little Siracusa for zip. Bam!
