Who loves ice cream sandwiches? We did! But they are just full of sugars and very little protein! So what do we do now? We try to come up with our own healthier version of course! We made Birthday Cake Cheesecake Ice Cream Sandwiches (each sandwich is HUGE and has 28g Carbs, 10g of Protein) and Chocolate Chip Cookie Dough Ice Cream Sandwiches (each HUGE sandwich has 29g Carbs, 9g of Protein). These sandwiches are BIG, and have as many carbs as a regular ice cream sandwich, BUT they also have 3 TIMES MORE protein than a regular ice cream sandwich. Translation - you are going to stay fuller and satisfied longer with these than the store bought! 💕 Recipe below 👇

Bariatric quick and tasty lunch hack. Tuna Mac n cheese:
37g carb, 32g protein if you eat the whole thing.
I can only eat maybe half, but I still get
18.5g carbs, 16g protein and can eat the other half later. 😂
I’m enjoying the different tuna flavors and putting them in other dishes to help with my protein goals.

This is a life changing, super yummy, LOW Carb & HIGH Protein Sausage gravy & biscuits! 💕

Note: Recipe makes 10 biscuits, 2g carb 6g protein (per biscuit). Gravy has 8 carbs, 19g protein per serving (makes 4 servings).

Y’all do not want to miss out on this recipe! My picky children ate this for breakfast today and said it was the BEST gravy ever and let me tell ya, they’ve tried them all and have high expectations on some good gravy and biscuits! Also, the biscuits were wonderful too! They couldn’t get enough. I will be making this many more times in the near future! 😂 Recipe below!

This supper was a delicious pizza thanks to my amazing daughter Mackenzie! Thanks sweetie, it was amazing! Mama’s deserve a night off from cooking too! 😂 Thank goodness this meal is so quick and tasty, it your kids will want to make it too! It’s an amazing thin crust that is low carb and high in protein. Recipe 👇

Low Carb High Protein Pizza (Serves 1)
17g of Carbs and 29g of Protein! 💕💕

Ingredients:
Mission Carb Balance Tortilla (2x8 size)
1/4 cup of chopped orange bell pepper
1/4 cup of diced onions
1/2 cup of shredded mozzarella cheese
17 slices of pepperoni
2 slices of Hormel thick cut reserve fully cooked bacon (crumbled)
1/2 cup of Rao’s Marinara
Avocado Oil Spray

Directions:
Preheat oven to 350 degrees. Line baking pan with parchment paper for a mess free meal! Place tortilla on parchment lined baking pan, and generously spray tortilla with the avocado oil spray. Bake tortilla for 3 minutes. Start building your pizza on the baked tortilla, start with marinara sauce, then all of your pizza toppings. Then bake in the oven (still at 350) for 10 minutes. Your pizza is perfectly crisped and ready to eat! It tastes like a delicious thin crust, but packed with protein and very little carbs! Enjoy! 😋

Note: this is a fun and easy way to get your protein in. If your children are picky eaters let them “make” their own “personal pizza” and you’ll be surprised how much fun they will have and more likely to eat it and be willing to try new pizza toppings like these yummy veggies! Also, you can add or take away whatever topping you want, just watch those carbs and count that protein! 💕

Parmesan Crusted Codfish
Each fish filet has 4g Carbs & 16g Protein

Ingredients:
4 Cod Fish Boneless Skinless Filets
2 Eggs Beaten
1/2 cup of Parmesan grated cheese
1 Tbsp of garlic powder
2 Tbsp of Dash Seasoning Blend
1 Tsp of Black Pepper
1 cup of Almond Flour or Meal

Directions
Pre-heat over to 425 degrees. Place beaten eggs in one bowl, then use another bowl and stir together your spices and almond flour. Feel free to add any additional spices you like, this was a tasty mix for us. Take your cod fish filets and dip them in your eggs then dip them in your seasoning/breading. Place your filets on top of a baking sheet (I cover mine with parchment paper to make it less messy). Then bake at 425 for 14 minutes (flip your fish halfway through to ensure an even cook). Ready to eat!

Tonight I served my fish with a side of green beans. I used Green Giant Restaurant Style Garlic Parmesan Green Beans with 2 Tbsp of Hormel Real Bacon Bits.
One serving is 6g Carbs, 8g protein
They were ok, but next time I think I’ll use canned green beans with some chicken bouillon.

Low Carb Red Lobster Cheddar Garlic Biscuits

Note: Recipe makes 10 biscuits, 2g carb 7g protein (per biscuit).

Ingredients:
3 cups finely ground almond flour
1 tablespoon baking powder
¼ teaspoon xanthan gum
¼ teaspoon salt
6 tbsp of I can’t believe it’s not butter (softened)
2 large eggs
1 Cup of Shredded Mild Cheddar Cheese
4 tbsp Dash Seasoning
2 tbsp Garlic powder
4 tbsp of Chives
One spray bottle of I can’t believe it’s not butter

Cooking directions for the biscuits
1. Preheat oven to 400 F. Line a large baking sheet with parchment.
2. In a large bowl, stir all ingredients until fully combined. Start with your eggs, butter (mix those well) then add your Dash seasoning, garlic powder, salt, baking powder, xanthan gum, shredded cheese, then your almond flour. Stir it by hand well.
3. Separate dough into 10 balls.
4. Place on baking sheet and bake for 13 minutes, until the biscuits begin to brown.
5. Once they are out of the oven spray each biscuit with I can’t believe it’s not butter spray, then sprinkle the chives on top of the biscuits.
6. Ready to eat! 😋

Low Carb High Protein Lasagna! This deliciousness makes 9 servings, and each serving has 6g of Carbs and 31g of Protein. Green Apple Drink

Ingredients:
1 package of 7up drink flavor mix
Sugar Free Dragon Green Apple Syrup
Lots of ice! 💕

Directions:
Fix your glass full of ice, mix your 7up drink flavor packet in a bottle of water, pour it in your cup of ice and flavor with as much sugar free dragon green apple syrup as you want until you get the flavor you desire. 😊

This whole drink only has 5 calories! 🤗

Cheesy Riced Cauliflower Chicken
Ingredients:
2 bags of frozen riced cauliflower (one of mine was rainbow and one was plain, but I like to use what I have! 😂)
1/2 jar of (8oz) of Mateos Medium Salsa (use mild if you want less spice)
7oz of sour cream (I used a half of the squeeze kind)
16oz of Panchos White Queso
1 bag of loaded cauliflower bites (I use Birds Eye Southwest Style)
1 tbsp of chicken bouillon (or use one cube)
2 tbsp of Paprika
3 packets of Stevia
2 cups of water
5 pieces of grilled chicken (I used the ready to eat grilled chicken from Sam’s Club, so fast and so easy!)

Directions:
In a non stick skillet dump your bags of riced cauliflower, and bag of loaded cauliflower bites, then pour two cups of water and add your chicken bouillon powder (or cube), and paprika. Let this boil and cook out the liquid as much as possible, then I use scissors and cut up the loaded cauliflower bites and mix it well with the rest of the cauliflower rice. (This helps give this even more flavor)Once your liquid is cooked down you will add the salsa, then mix it well. You will then add your Panchos white queso sauce. Be sure to mix this well with your riced cauliflower mixture. I thought it was a bit spicy for my kids, so I added the sour cream and 3 packets of stevia to my mixture (fun fact if something is too spicy add sour cream or sugar to cool it down, thank goodness zero sugar sweeteners like stevia work too! 😂).
While this cooking go ahead and fix your grilled chicken. I bought some from Sam’s Club and all I had to do was bake it in the oven. (FYI if you buy it from Sam’s (the ready to eat) be sure to bake your chicken covered on 350 degrees for 23 minutes, it’ll be perfect!). Once your chicken is done serve it with your yummy riced cauliflower mixture.

Rice with chicken 26g Carbs, 49g Protein per serving, recipe serves 5.
