Parmesan Crusted Codfish
Each fish filet has 4g Carbs & 16g Protein
Ingredients:
4 Cod Fish Boneless Skinless Filets
2 Eggs Beaten
1/2 cup of Parmesan grated cheese
1 Tbsp of garlic powder
2 Tbsp of Dash Seasoning Blend
1 Tsp of Black Pepper
1 cup of Almond Flour or Meal
Directions
Pre-heat over to 425 degrees. Place beaten eggs in one bowl, then use another bowl and stir together your spices and almond flour. Feel free to add any additional spices you like, this was a tasty mix for us. Take your cod fish filets and dip them in your eggs then dip them in your seasoning/breading. Place your filets on top of a baking sheet (I cover mine with parchment paper to make it less messy). Then bake at 425 for 14 minutes (flip your fish halfway through to ensure an even cook). Ready to eat!
Tonight I served my fish with a side of green beans. I used Green Giant Restaurant Style Garlic Parmesan Green Beans with 2 Tbsp of Hormel Real Bacon Bits.
One serving is 6g Carbs, 8g protein
They were ok, but next time I think I’ll use canned green beans with some chicken bouillon.
Low Carb Red Lobster Cheddar Garlic Biscuits
Note: Recipe makes 10 biscuits, 2g carb 7g protein (per biscuit).
Ingredients:
3 cups finely ground almond flour
1 tablespoon baking powder
¼ teaspoon xanthan gum
¼ teaspoon salt
6 tbsp of I can’t believe it’s not butter (softened)
2 large eggs
1 Cup of Shredded Mild Cheddar Cheese
4 tbsp Dash Seasoning
2 tbsp Garlic powder
4 tbsp of Chives
One spray bottle of I can’t believe it’s not butter
Cooking directions for the biscuits
1. Preheat oven to 400 F. Line a large baking sheet with parchment.
2. In a large bowl, stir all ingredients until fully combined. Start with your eggs, butter (mix those well) then add your Dash seasoning, garlic powder, salt, baking powder, xanthan gum, shredded cheese, then your almond flour. Stir it by hand well.
3. Separate dough into 10 balls.
4. Place on baking sheet and bake for 13 minutes, until the biscuits begin to brown.
5. Once they are out of the oven spray each biscuit with I can’t believe it’s not butter spray, then sprinkle the chives on top of the biscuits.
6. Ready to eat! 😋
