A warm, nourishing way to start January mornings. This simple breakfast bake is soft, comforting, and easy to enjoy—perfect for cozy winter days and senior-friendly routines.

Ingredients:

3 ripe bananas, mashed

2 cups rolled oats

1 ½ cups milk (or almond/oat milk)

2 eggs

2 tbsp honey or maple syrup

1 tsp cinnamon

1 tsp vanilla extract

1 tsp baking powder

Pinch of salt

Optional: sliced bananas, blueberries, or chopped walnuts on top

Instructions:

Preheat oven to 350°F (175°C) and lightly grease a baking dish.

In a large bowl, mash the bananas until smooth.

Add eggs, milk, honey (or maple syrup), and vanilla. Mix well.
