This post is dedicated to my Mom
Lost her awhile ago. As Mothers day is soon approaching thought of sharing one of her recipes.
When i was younger my mom would write down recipes for family members as she was a great cook.
So i took a page our of her book. Hope you enjoy this plant based recipe. Its heart healthy, kidney friendly , and diabetic diet friendly.
Ingredients
4 boiled medium potatoes cut into square cubes
2 onions finely chopped
5 garlic cloves
1 inch ginger
1 cup any plain yogurt
2-4 dry red chillies depending on spice level
1/2 cup grated coconut
2-3 cloves
1/2 inch cinnamon stick
2-3 cardamoms
1/8 tsp salt
2 tablespoons chopped cilantro leaves

Blend the following ingredients garlic, ginger, coconut, dry red chillies, cloves, cinnamon, cardamom and keep aside. Add yougrt to this mixture and mix well.
Take oil in a skillet add the blended mixture and let it simmer till the oil separates out. Add the boiled potatoes and cook for five minutes. Add salt and garnish with 🌿 cilantro.
One can have this with rice or chapathi

Sorry I did not forget you guys. Just have been super busy. So posting a plant based option. Hope you enjoy the recipe. Eggplants

Who said plant based foods are depressing 😊
Here you go, a neat little recipe with eggplants💚
Hope you like it✅
Ingredients
Dry roast the following items
1/4 cup peanuts + + 2 tsps sesame seeds + 2 dry red chillies 1/4 cup dry coconut
Cool it and blend it to a fine paste with 3- 4 ounces of water
Take 5 - 6 medium sized eggplants, make a slit on 4 side, keeping its shape intact. Brush on some oil on each egg plant and place in air fryer for 5 - 7 minutes at 400 F for 7 - 10 minutes till soft.
In a pan add 1 tbslp oil, + add 2 red chillies + 1 tsp mustard seeds + 1 tsp cumin seeds
To this add 1 diced medium sized onions. Once golden brown add the following spices
1 tsp cumin powder + 1 tsp paprika powder + 1 tsp coriander powder + 1/2 tsp salt. Stir for a few minutes and then add 4 tbslp tamarind paste.
Finally add the blend of peanut paste to it, let it simmer for 4 -5 minutes. Add the eggplants and let it simmer for another 4 -5 minutes
Voila ready to serve. Serve it plain, or with rice or naan.

There are ways you can enjoy thanksgiving and not feel guilty 💚
CKD friendly Thanksgiving is a good way to keep you healthy and not feel deprived of all the food options out there✅
Choose appetizers that have some kind of fruit or vegetable tray in it✅
One can choose cream cheese and low sodium crackers to keep sodium intake low✅
Choose side dishes with vegetables such as carrots or green beans or zucchini✅
Desserts such as apple or cherry pie,peach cobbler and crumble cake all low potassium options✅
Do enjoy the turkey but keep the portions low as its animal based protein✅
Try and substitute something plant based such as beans, lentils and still enjoy the rest so one does not feel deprived✅

Have you ever wondered as to how much phosphorus one eats when eating foods loaded with phos additives✅

Here is a quick check, on amount of free phosphorus in one’s food✅

The top section mentions foods without additives🥰
The bottom section in red for each category shows you how much more free phosphorus is present when phos additives are added to foods 🛑

Food sources of protein which contain phosphate additives provided an average of >100 mg of additional phosphorus per 100 g of protein food source

Now if you have CKD and or are End Stage Renal Disease /dialysis. This can show you how many more binders one might have to take with one's meals to help get rid of phosphorus from diet.

This finding also suggests that even a high intake of phosphate binders is ineffective to control phosphatemia in the presence of an uncontrolled phosphorus intake in the form of additives. This could also explain, in part at least, the existence of patients who do not respond to phosphate binder therapy

The study showed cooked ham and roast breast turkey with phosphate additives had a phosphorus content 70% higher than samples containing no additives

Thus check your ingredients, and if it has phosphorus additives switch to brands that do not have phosphorus additives

I made a few changes to keep it low sodium

1/2 cup chickpeas - 112 mg phosphorus, 237 mg potassium , 135 mg Sodium, Proteins - 6 g, Fiber - 4g, Calories - 127

🌱🙌🎉 Crispy Ranch Chickpeas!!

🔖 Make sure to save this recipe to make later!!

✨Ingredients✨
1 can of chickpeas buy the organic low sodium kind
1 tbsp olive oil
2 tsp dill
2 tsp salt free onion powder
1/2 tsp salt free garlic powder
1/2 tsp salt skip this step to keep salt intake low

🤗Strain your chickpeas and shake excess liquid. Wash real good till all the brine is gone.

🔥 Pop into your air fryer for @400 degrees for 10-15 minutes until golden and crunchy. Be careful not to overcook or they will be dry! If using an oven bake @400 for 30 min tossing halfway.

😍Season with olive oil & spices, toss and enjoy!!!

Taste Alterations is a very common symptom of Chronic Kidney Disease CKD and ESRD patients

The CKD taste plate helps clinicians and at times patients and caregivers identify reasons for decreased po intake.
- There are 5 separate tastes : Sweet, sour, bitter, salty, umami (savory)

- Use the plate method by recognising the symptoms and trial one of the solutions to see if it helps

Plate method
- inner plate --------> check for taste

- outer plate ----------> management of symptoms

Salty taste - High concentration of salivary sodium - restrict sodium, and add sweet tastants like tomatoes, beetroot

Metallic taste - High concentration of Urea - Avoid metallic cutlery, sodium bicarbonate mouthwash, prior to meals mints, ginger, beer, fruit juices, and tea

Bitter taste- High urea levels - Avoid bitter tastants eg coffee, chocolate, beer. Sweet tastants carbohydrates in a diet cooked with honey, fruit juices, tomatoes, beetroot. In case of diabetics care should be exercised if patients are trying to stimulate with high sucrose or glucose carbohydrates.
Adding acidic foods and drinks like grains, lentils, kiwi fruit, blueberries, acidic drinks like lemon, carbonated drinks, acidic condiments, and vinegar

Loss of taste - High salivary sodium or at times zinc deficiency - Work with a MD for zinc supplementation which needs to be monitored when use is long term. Adding in acidic foods and beverages. Adding spices , chilli, vinegar, marinades

Loss of Sour taste - High bicarbonate levels -- Trial acidic foods,and beverages as mentioned above

Loss of umami taste - high salivary bicarbonate - Trial of acidic foods, drinks and condiments as mentioned above.
