🍴 Menu Monday – November 17th

Comfort in a Bowl: Hearty Chicken & Rice Soup 🍲

Cold November days call for something warm, easy, and nourishing! This simple chicken and rice soup is perfect for caregivers and clients alike — it’s budget-friendly, easy to reheat, and fills the house with cozy aromas.

You’ll Need:
1 cup cooked chicken, shredded
½ cup uncooked rice (white or brown)
4 cups chicken broth
1 cup chopped carrots
1 cup chopped celery
½ cup diced onion
1 teaspoon garlic powder
Salt, pepper, and parsley to taste

Instructions:
1️⃣ Combine all ingredients in a pot or slow cooker.
2️⃣ Simmer for 25–30 minutes on the stovetop (or 3–4 hours on low in the crockpot).
3️⃣ Stir occasionally until the rice is tender and the vegetables are soft.

🍎 Menu Monday from Health Care At Home!
Tender pork chops paired with sweet cinnamon apples — a Michigan fall favorite that tastes like comfort. 🍂
Serves: 4 • Prep Time: 10 min • Cook Time: 25 min

Ingredients:
4 boneless pork chops
2 Tbsp olive oil or butter
2 apples, sliced (Honeycrisp or Gala work best)
1 small onion, sliced
1 Tbsp brown sugar
½ tsp cinnamon
½ cup apple juice or cider
Salt and pepper to taste

Directions:
Heat oil in a skillet over medium-high heat.
Season pork chops with salt and pepper, sear 3–4 minutes each side; remove and set aside.
In the same pan, add apples, onion, brown sugar, and cinnamon; sauté 3 minutes.
Pour in apple juice, return pork chops, cover, and simmer 10–12 minutes until tender and sauce is slightly thickened.

Tips:
Add a pat of butter at the end for a richer glaze.
Serve with mashed potatoes or roasted carrots for a full meal.

🍲 Wellness Wednesday: Fuel Yourself First 🍂

Caregivers are some of the busiest people around — always making sure others are cared for. But it’s easy to forget one simple thing: you need to eat, too! 💙

When your day is packed with visits and appointments, skipping meals or grabbing something quick can become a habit. But staying nourished helps keep your energy, focus, and mood steady throughout the day.

Here are a few easy ways to stay fueled on the go:
🥣 Pack simple, balanced snacks — yogurt, fruit, trail mix, or cheese sticks travel well and keep you full between visits.
🥪 Plan ahead. Prepping lunches or snacks the night before makes mornings less stressful.
💧 Stay hydrated. Keep a water bottle in your car — dehydration can sneak up and cause fatigue.
🍎 Eat real meals. Even a quick sandwich or soup is better than skipping food altogether.

Taking care of others starts with taking care of yourself — and that includes nourishing your body. You deserve to feel your best! 💙

🥔 Menu Monday from Health Care At Home!
Cozy, creamy, and cheesy — our Ham & Potato Bake is the perfect warm-up for chilly November days. Easy, filling, and always a family favorite! 💛

Serves: 6 • Prep Time: 15 minutes • Cook Time: 40 minutes

Ingredients:
3 cups diced potatoes (fresh peeled or frozen hash brown cubes)
1½ cups cooked ham, diced
1 can cream of celery or mushroom soup (10.5 oz)
½ cup sour cream
½ cup milk
1 cup shredded cheddar cheese (divided)
¼ tsp onion powder
¼ tsp garlic powder
Salt and pepper to taste
2 Tbsp butter (optional, dotted on top for richness)
Fresh parsley for garnish

Directions:
Preheat oven to 375°F and grease an 8x8 or 9x9 baking dish.
In a large bowl, mix soup, sour cream, milk, ¾ cup cheese, onion powder, garlic powder, salt, and pepper.
Add potatoes and ham, stirring until evenly coated.
Pour into baking dish, spread evenly, and top with remaining cheese and butter dots (if using).
Bake 35–40 minutes, until bubbly and golden.
Let cool 5–10 minutes before serving; sprinkle parsley for color.

Tips:
Add 1 cup frozen mixed vegetables for a full meal in one dish.
Substitute leftover holiday ham for a no-waste meal.
For a crispier top, broil 1–2 minutes at the end.

That means an extra hour of sleep 😴 and brighter mornings ahead — but also earlier sunsets, so be extra careful on the roads and watch for pedestrians at dusk.

🔋 Safety Tip: This is also the perfect time to check smoke alarms, carbon monoxide detectors, and flashlights as we head into the winter months.

Jack-o’-lanterns started out carved from turnips, not pumpkins! 🕯️
The tradition comes from an Irish legend about “Stingy Jack,” who roamed the night with a carved-out turnip lantern. When Irish immigrants came to America, they found that pumpkins were bigger and easier to carve — and a new Halloween classic was born! 🎃

🦌 Menu Monday at Health Care At Home!
Cozy up with this Venison & Mushroom Stroganoff — creamy, hearty, and full of Michigan fall flavor. Perfect for a chilly night or meal

Serves: 4 • Prep Time: 10 minutes • Cook Time: 20 minutes

Ingredients:
1 lb ground or sliced venison (or lean beef)
1 small onion, diced
1 cup sliced mushrooms (cremini or white)
2 cups cooked egg noodles
1 can cream of mushroom soup (10.5 oz)
½ cup sour cream (or plain Greek yogurt)
1 tsp Worcestershire sauce
½ tsp salt, ¼ tsp pepper
Fresh parsley for garnish

Directions:
In a large skillet, brown venison and onion over medium heat until meat is cooked through. Drain any excess fat.
Add mushrooms and cook for 3–4 minutes until softened.
Stir in cream of mushroom soup, sour cream, and Worcestershire sauce. Reduce heat and simmer for about 5 minutes until creamy and hot.
Add cooked noodles and toss until coated evenly.
Garnish with parsley and serve warm.

Tips:
Use Greek yogurt instead of sour cream for a lighter version.
This also freezes great — portion it into small containers for easy caregiver lunches.
