🥣✨ Happy National Soup Day! ✨🥣
Nothing says comfort like a warm bowl of homemade soup — especially when it’s packed with flavor and good-for-you ingredients.
Today we’re loving this Healthy Southwest Chicken & Veggie Soup
🌟 Ingredients:
• 1 tbsp olive oil
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 bell pepper, chopped
• 1 zucchini, chopped
• 1 cup corn (fresh or frozen)
• 1 can black beans, drained & rinsed
• 1 can diced tomatoes (low sodium)
• 4 cups low-sodium chicken broth
• 1½ cups cooked shredded chicken
• 1 tsp cumin
• 1 tsp chili powder
• Juice of 1 lime
• Salt & pepper to taste
🥄 Directions:
1️⃣ In a large pot, heat olive oil over medium heat. Sauté onion and garlic until fragrant.
2️⃣ Add bell pepper, zucchini, corn, black beans, and tomatoes. Stir to combine.
3️⃣ Pour in chicken broth, then add chicken, cumin, and chili powder.
4️⃣ Bring to a boil, then reduce heat and simmer 15–20 minutes.
5️⃣ Finish with fresh lime juice, salt, and pepper.
Top with avocado, cilantro, or a sprinkle of shredded cheese if you’re feeling fancy
