Spaghetti Squash Casserole (Low-Carb)

Ingredients
• 1 medium spaghetti squash
• 1 tbsp olive oil
• 1 cup cooked chicken or ground turkey (optional)
• 1 cup shredded mozzarella
• ½ cup grated Parmesan
• ½ cup ricotta or cottage cheese
• 1 cup marinara sauce (low-sugar)
• 1 tsp garlic powder
• 1 tsp Italian seasoning
• Salt & pepper to taste
• Optional add-ins: spinach, mushrooms, zucchini, bell peppers

Instructions
1. Cook the squash
• Preheat oven to 400°F
• Cut squash in half, remove seeds
• Drizzle with olive oil, salt & pepper
• Roast cut-side down for 35–40 min
• Scrape into strands with a fork
2. Mix the filling
• Lower oven to 375°F
• In a large bowl combine:
• Spaghetti squash strands
• Chicken/turkey (if using)
• Marinara
• Ricotta/cottage cheese
• Garlic powder & Italian seasoning
• Half of the mozzarella & Parmesan
3. Assemble & bake
• Transfer mixture to a greased casserole dish
• Top with remaining cheeses
• Bake uncovered 25–30 minutes, until bubbly
• Optional: Broil 2–3 minutes for golden top
