🍝🎉 Mama Mia! Celebrating National Meatball Day! 🎉🍝

Our amazing Business Office Manager, Kaitlin, rolled up her sleeves and rolled out some delicious fun with our residents for National Meatball Day! 😂👩‍🍳

Together, they made this ridiculously delicious dish:

✨ Stuffed Meatballs with Spinach & Cheese Fettuccine ✨

These flavorful meatballs were stuffed with a creamy spinach and cheese filling, simmered in marinara, and served over fettuccine. Needless to say… they were a huge hit! 😋🍝

🥣 Ingredients

Spinach-Cheese Filling
• 8 oz cream cheese
• ¼ cup cooked spinach
• 1 tbsp garlic powder
• 1 cup shredded mozzarella

Meatballs
• ½ lb ground beef
• ½ lb ground pork
• 1 egg
• ½ cup parsley
• ½ cup breadcrumbs
• 1 tsp salt
• ½ tsp pepper

To Cook
• 2 cups marinara sauce
• ½ lb fettuccine (or any long pasta), cooked

👩‍🍳 Preparation
1️⃣ Mix cream cheese, spinach, garlic powder, and mozzarella until smooth.
2️⃣ In another bowl, combine beef, pork, egg, parsley, breadcrumbs, salt, and pepper.
3️⃣ Flatten a golf ball–sized portion of meat in your hand.
4️⃣ Add a spoonful of the spinach-cheese filling to the center and seal the meat around it, rolling into a ball.
5️⃣ Repeat with remaining mixture.
6️⃣ Sear meatballs in a pan over medium-high heat for about 1 minute, then flip.
7️⃣ Add marinara sauce and gently stir.
8️⃣ Cook about 15 minutes until meatballs are cooked through and sauce thickens.
9️⃣ Serve over fettuccine and enjoy!

Our residents had an out-of-this-galaxy good time visiting the planetarium! The adventure was even more special since they’re from the generation when Pluto was still a planet. 🌟

It was a fun day filled with laughter, memories, and a little cosmic nostalgia for our community!

🏅😄 Senior Olympics Showdown! 😄🏅

Over the past two weeks, our Assisted Living and Memory Care residents went head-to-head in an epic “Senior Olympics” 🏋️‍♀️🎯 — and the competition did not disappoint! Last year, Memory Care took home the gold 🥇, but this year, Assisted Living came out on top, snatching the most gold medals 🏅✨.

From fierce determination 💪 to surprisingly creative trash talk 😂, every participant brought their A-game. We wrapped up with closing ceremonies 🎉, celebrating every medal winner and proving that age is just a number…and competitive spirit is forever 💛💫.
