🍝🎉 Mama Mia! Celebrating National Meatball Day! 🎉🍝
Our amazing Business Office Manager, Kaitlin, rolled up her sleeves and rolled out some delicious fun with our residents for National Meatball Day! 😂👩🍳
Together, they made this ridiculously delicious dish:
✨ Stuffed Meatballs with Spinach & Cheese Fettuccine ✨
These flavorful meatballs were stuffed with a creamy spinach and cheese filling, simmered in marinara, and served over fettuccine. Needless to say… they were a huge hit! 😋🍝
🥣 Ingredients
Spinach-Cheese Filling
• 8 oz cream cheese
• ¼ cup cooked spinach
• 1 tbsp garlic powder
• 1 cup shredded mozzarella
Meatballs
• ½ lb ground beef
• ½ lb ground pork
• 1 egg
• ½ cup parsley
• ½ cup breadcrumbs
• 1 tsp salt
• ½ tsp pepper
To Cook
• 2 cups marinara sauce
• ½ lb fettuccine (or any long pasta), cooked
👩🍳 Preparation
1️⃣ Mix cream cheese, spinach, garlic powder, and mozzarella until smooth.
2️⃣ In another bowl, combine beef, pork, egg, parsley, breadcrumbs, salt, and pepper.
3️⃣ Flatten a golf ball–sized portion of meat in your hand.
4️⃣ Add a spoonful of the spinach-cheese filling to the center and seal the meat around it, rolling into a ball.
5️⃣ Repeat with remaining mixture.
6️⃣ Sear meatballs in a pan over medium-high heat for about 1 minute, then flip.
7️⃣ Add marinara sauce and gently stir.
8️⃣ Cook about 15 minutes until meatballs are cooked through and sauce thickens.
9️⃣ Serve over fettuccine and enjoy!
