Bringing back a crowd favorite from Erica Ochoa, NP 😋 Need an easy and nourishing meal idea? Try sweet potato nachos! ⬇️
Ingredients:
* Cooked lean ground meat of choice (or low sodium black beans for vegetarians)
* Sweet potatoes
* Taco seasoning
* Toppings of your choice: low fat shredded cheese, tomato, onion, lettuce, avocado or guacamole, sour cream (or Greek yogurt for extra protein!)
* Hot sauce of your choice
* Sliced limes for garnish
Thinly slice your sweet potatoes and toss with avocado oil, salt & pepper. Then place in a single layer on a lined baking sheet. Bake on 400 degrees F for about 25-30 minutes.
While the potatoes are cooking, brown your meat with taco seasoning. Prepare your toppings.
When the potatoes are done, top with ground meat/beans & cheese. Put back in the oven until cheese is melted.
Then top with your favorite nacho toppings and enjoy!
