Recipe of the Week - Let's balance it all out! Today's recipe is less of a recipe and more a realistic look at food. Life is hard, and being pregnant giving birth and going through postpartum is hard too. We don't always have time or energy to spend cooking. Sometimes we need a break. My family had one of those nights this week. So instead of cooking we had chicken nuggets and mac n cheese. Not the most healthy option. But we were fed. We got the nutrients we needed. And that's what matters. Stocking up on some extras like these can be very important. And it's ok to indulge in cravings and less healthy meals from time to time. Balance is the key!

This weeks recipe is inspired after a bout of nausea in the house! These scones are a great simple way to deal with some of that morning sickness!
Lembas

Makes about 12-16 lembas.

2 1/2 cups of flour
1 tablespoon of baking powder
¼ teaspoon of salt
½ cup of butter
1/3 cup of brown sugar
1 teaspoon of cinnamon
½ teaspoon honey
2/3 cup of heavy whipping cream
½ teaspoon of vanilla

Directions:
Preheat oven to 425F. Mix the flour, baking powder and salt into a large bowl. Cut in butter and mix well, using a mixer is easier.
Thoroughly mix in sugar and cinnamon.
Using a fork, stir in cream, honey, and vanilla until a nice thick dough forms.
Roll the dough out about 1/4ā€ thickness. Cut out 3-inch squares and transfer the dough to a cookie sheet. Gently score each square diagonally with a knife.
Bake for 8-12 minutes until lightly gold, with a crisp bottom and soft top. It will firm up as it cools.

So excited to share this app I found. It's called Count the Kicks. This app is designed to help you get to know your baby while they are still growing inside you and see what is normal for them. Sit down everyday around the same time and see how long it takes to reach 10 movements. You can created an account and log the strength of the movements as well as keep track of them over time. This is a great way for parents to see what is normal for their baby and give lots of reassurance! There are a ton of great resources the app provides a side from helping you keep track of your baby's movement! Check it out today!

Week 7, Chinese Chicken. Skip ordering in and try making this Chinese Chicken. This freezes well and is great to serve with rice or noodles.
Ingredients
3 lbs. chicken
Minced garlic – measure with your heart (if you like to taste more you can simply slice your garlic)
Salt and pepper
½ cup corn starch
~
Sauce
Onion powder
At least 4 tbs minced garlic
3 cups chicken broth
1 cup hoisin sauce
6 tbs soy sauce
Red pepper flakes – to taste
½ cup sugar
6 tbs rice wine vinegar
1 tbs ginger powder
1 tbs corn starch
1. Cut chicken into bite size pieces and mix with minced garlic and salt and pepper. Then mix into corn starch. Allow to rest for 10-15 minutes.
2. Mix all the sauce ingredients but the corn starch into a bowl and set aside.
3. Spread chicken onto a lined cookie sheet and bake at 410 degrees for 30 minutes or until done.
4. When Chicken is 5 minutes from being done add sauce to a large pot on medium allow to simmer stirring regularly.
5. Mix cornstarch with 2 tbs water and add to simmering sauce. Mix until thick.
6. Add chicken to sauce mixing well and serve with rice.
7. Enjoy!

Week 6 Recipe! Nacho Dip! We all crave nachos on occasion, and this is a wonderful one! This isn’t very healthy, but that’s ok! This freezes very well and is a great snack to have on hand for your postpartum period. (My husband loves to eat this as a cheesy hamburger soup).
Ingredients
1 can Cambell’s Fiesta Nacho Cheese
1 cup milk
1 cup queso dip
1-1 ½ cup shredded cheese
1 lb. hamburger
1 bag tortilla chips

1. Cook hamburger and drain off grease
2. Mix hamburger, fiesta nacho cheese, milk, queso dip together in a saucepan, allow to simmer mixing regularly.
3. Add shredded cheese and mix.
4. Serve with tortilla chips

Week 4 Recipe! Sweet Pork Chops with Sweet Potato Mash and Corn on the Cob! This week’s recipe is great summer recipe or if you’re from Wyoming a great year ā€˜round recipe! I cook everything on the grill to avoid heating the house up in the Summer, but you can absolutely make this in the oven too! This all freezes surprisingly well, just make sure to cut the corn off the cob! This is a wonderful way to get some fresh veggies in you year around and all those good vitamins! This recipe makes about 4 – 6 servings
Ingredients
2 – 4 lbs. of pork chops
1/3 cup brown sugar
Minced Garlic – measure with your heart!
Your favorite Herb seasoning
~
4 large, sweet potatoes
4 tbs butter
8 tbs brown sugar
4 tsp cinnamon
½ - 1 cup heavy cream or milk
~
4-8 cobs of corn
4-8 tbs butter
1. Preheat your grill to the low setting. (Pork should be cooked low and slow). Wash potatoes and shuck corn.
2. Cut slits into the potatoes to cook quickly. Only cut about 1/3 of the way through on each side. Rub 1 tbs brown sugar and ½ tsp cinnamon on each one. Add a tbs of butter before wrapping completely in foil.
3. Add 1 tbs butter to each corncob and wrap in foil completely.
4. Put potatoes and corn onto the grill to start cooking.
5. Mix pork chops with seasonings, ensuring all parts are equally covered.
6. Once the corn and pork chops are about halfway done (it will be done when you can easily pierce with a fork) Add the pork chops to the grill.
7. Flip everything regularly.
8. Remove pork chops when completely white all the way through.
9. When corn and potatoes are done remove.
10. Take the foil off the potatoes and remove the skins, mash with heavy cream or milk starting with ½ cup, add more as needed. Add remaining brown sugar and cinnamon.
11. Enjoy!
